That looks delicious. I'm cooking some on Sunday. I managed to get a whole shoulder of goat and the butcher cut it up into nice big pieces. Lots of meat, lots of bone.
I'm going to marinate it with a mixture of Texs' Jamaican curry powder, Betapac curry powder, turmeric and Indian curry powder
It will sit in the fridge for two days, then cook it nice and slow.
We'll have it with rice and gungo peas

When you get the pre chopped it’s from different animals so when you finish some pieces can be a bit tougher than others.

  • @whytehalld

It looks delicious in the end, but I noticed you have missed a couple of steps in the preparation and the cooking. First, the meat was not chopped as small as it should have. Second, the seasoning, which usually varies by different persons and what season you have on hand. Third, you didn't add any curry to the oil and parched it. Fourth, you poured all the seasoned meat into the hot oil. Concerning the latter, you should have removed the meat from the seasoning and then added the meat into the hot oil. You'd add the seasoning to the meat much later (about 2 hours), with some chopped carrots, green pepper, and Irish potatoes. 15 to 20 minutes later and you're done. I love my curried goat with white (plain rice), which is the traditional way. Curried goat with rice-and-peas (peas and rice) comes much later. Anyway, guys, you tried your best!!! Just an additional observation, a foreign accent doesn't good over well with cooking Jamaican foods!!!
