- In this video, I feature my Cinnamon Delight Breakfast Muffins that are a great alternative to eggs and bacon for breakfast. Also, if you have any food allergies or nut allergies, this is good for you as well. Let me know what you think when you try these and feel free to chime in on any modifications or changes made!

Cinnamon Delight Muffins (makes 12 muffins):
- 1 cup golden flax meal
- 4 eggs
- 1/2 cup avocado oil or coconut oil
- 1/2 cup brown swerve or confectioners swerve
- 1/4 cup coconut flour
- 2 tsp vanilla
- 2 tsp cinnamon
- 1 tsp lemon juice
- 1/2 tsp baking soda
- 1/8 tsp Himalayan sea salt
- 1/2 cup Hemp seeds
INSTRUCTIONS:
1. Preheat oven to 325F.
2. Line 12 muffin cups with parchment muffin liners or thoroughly grease unlined muffin pan.
3. Mix all dry ingredients (except Hemp seeds) together and add to mixing bowl
4. Add all liquid ingredients to the dry ingredients in the mixing bowl.
5. Beat with mixer until just moistened throughout.
6. Stir in Hemp Seeds.
7. Fill muffin liners with mixture about 3/4 full.
8. Bake for 18-20 min.
9. Serve with or without a bit of Kerrygold Butter and Enjoy!

I made these last night, I didn't have hemp seeds and I don't have a nut allergy so I used walnuts. OMG SO GOOD! I can't wait for breakfast this morning! Thank you!!
Looks fantastic! I'm out of flax meal but am going to see if I can sort of create ur muffin using a ground flax, chia, hemp, pumpkin seed mix w the coconut flour. Thank u as always for sharing and caring
You should get some silicone muffin molds and get various sizes of molds. They are so nice for baking and for making fat bombs. Everything just slips right out :-) If you don't have a stand mixer can you just use a hand mixer for mixing this recipe? Also unsweetened Vanilla or original Milkadamia (1total carb,1 fiber) would be great, if you can't do almond milk

Just finished making them and OMG just what u said about the smell of the house. Only had 1/2 cup of flax meal so just cut the recipe n half. .Filled 4 muffin tins and used the rest in a small cake pan but first added a tablespoon of Almond-Coconut Butter!!! Wow!! Just made these and they are awesome!! I had one warm out of the oven and topped it with kerri gold 😍 I used Sukrin Gold granulated brown sugar plus I added about 10-15 drops of liquid stevia. Thanks for sharing the recipe. I will make these again and again!

Wil be making these tomorrow but instead of the hemp, I’ll be adding walnuts and a negligible amount of dark chocolate chips and use them as a quick dessert during my keto reset first week back! They look amazing

Can you share the differences in the swerves? I see you use brown,granulated and confectioners
Confectioner blends really well in recipes and dissolves. Granular has a grainy texture in recipes. The brown sugar replacement taste like brown sugar, but doesn't mix well with all recipes (especially oily ones)
@@MarydToKeto I use sugar mostly in smoothie so which should I get
@@lzshow I would do the confectioner since that dissolves really well in mixtures and since you're using it in something that is mostly liquid, I think Swerve confectioner would be your safest best for sure!
So I'm Struggling.
The Other Day I Was 266. Everything Was Dropping Off. Now, Today I'm 273.
Idk What I Did Wrong. Like. Super Frustrating
Hmmm...have you been eating alot of fat? Even still...i KNOW its frustrating and to be honest, situations like this in the past sometimes trigger me to binge. Kinda like a "oh what's the use 🤷♀️" mentality. But please stay encouraged, there will be moments of incredible frustration as well as success on this journey. You can do this, just stay the course inspite of moments of disappointment. ❤
It could be so many things.. you could be retaining water or possibly to much salt. (Not drinking enough water) My go to for plateaus or weird gains, which have never failed me is a fast.. try water fasting for 1-3 days. It’s like a reset and you’ll probably go back to where you were or less. 9 times out of 10 it’s probably not “fat” that you gained. (Bloating) could be stress or not enough sleep. I suggest the water fast. Gives you time to decompress and not have to worry about what you need to eat, calorie counting and all that. Much success to you. You got this don’t give up👍🏼🙌🏽😁
