Lebanese Muhamarra - spicy nuts pâté, plant-based/ vegan dip!

    Muhammara, محمرة، a spicy nuts pâté dip recipe enjoyed throughout the Middle East, normally super spicy & delicious, a plant-based/vegan appetiser that is easy to prepare & delightful to enjoy.
    This recipe is from a good top Lebanese chef, Elie W Haddad, with his food being exquisite, making sure everything you eat is flavoursome. He’s also my handsome Uncle & Mummy Najat’s youngest & cheekiest brother 😁🙏❤️🌹🧿
    Note: using a good food processor will help you in making a smooth texture for the pâté.
    150g or 1/2 bottle of Malaysian Extra Hot Chilli Sauce (Maggi)
    150g walnuts
    150g raw almonds
    125g raw cashew nuts
    75g raw pistachios
    35g or less red chilli peppers
    1 red bell pepper, deseeded
    Seasalt to taste, 1-2 tsp
    4-6 tbsp Extra virgin olive oil
    Optional additions:
    1 tbsp pomegranate molasses
    1/2 tsp ground cumin
    1/2 tsp ground coriander
    1/2 tsp chilli powder
    1/2 tsp Tabasco
    1/2 tsp dried chilli flakes
    1/2 tsp sweet/ smoked paprika
    Walnuts, parsley & above options for decoration
    🔥Roast or airfry the cashews & almonds, not for long. Gas 6/200C/180fan for 5-10 mins, depending on oven, until it’s toasted golden brown. Once done, set aside on tray & allow to cool.
    🌰 meanwhile, add pistachio & walnuts in food processor & whizz nuts into very fine breadcrumbs. Place in a large bowl.
    🥜 once the almond & cashew have cooled, add these to food processor & whizz again to find breadcrumbs. Transfer to same bowl & mix nuts together well.
    🌶️ add in food processor the cut up chillies (with seeds or not) & red bell pepper & whizz again for 2 mins.
    🥫add Malaysian extra hot chilli sauce & nuts & blend again.
    🧂add salt, olive oil & any further optional spices or molasses - it’s entirely up to you. The main thing is to taste it & see if it’s to your liking.
    🧆 transfer the spicy nuts pâté to a serving dish & decorate with while nuts, parsley leaves, spices etc & drizzle with more extra virgin olive oil and/ pomegranate molasses - the choice is yours! Enjoy lovelies 🙏❤️🌹
