Lebanese Fool or Ful Medamas (fava bean dip) - plant-based vegan dish for breakfast/brunch/lunch

    Serves 2-4
    What is fool medammes? I hear you ask - It’s simply a cooked stew of fava beans that is served in the Middle East for breakfast, brunch/lunch.
    It’s one of a number of small little warm plates that’s served with a drizzle of EV olive oil & combined with garlic, salt, lemon juice & optional extras to give it a good kick of energy, such as cumin, chilli (fresh or dried), allspice & extra chickpeas, a little tahini & all topped with finely chopped tomatoes & parsley.
    Best thing about this dish being vegan/plant-based! Even carnivores will enjoy this with warm Arabic flatbreads.
    You Need:
    2 x 400g California Garden Fava Beans Lebanese recipe (canned)* - OR you can buy 1 plain fava beans & 1 chickpeas cans (400g each in water)
    1-2 cloves of garlic, crushed
    1 tsp seasalt or to taste
    Juice of 1-2 fat lemons
    50-100g flatleaf parsley (rinsed), finely chopped
    2-4 tomatoes (your choice to choose), finely chopped
    * purchased from Middle Eastern/ Turkish shops or from Amazon
    In a small pan, empty the contents of the can fool, place on hob over medium-low heat & simmer for 5 mins.
    Meanwhile, in a small bowl (heat-proof) add crushed garlic with salt (or use pestle & mortar crushing garlic with salt into paste), next add the lemon juice & mix well then add the heated contents from pan.
    Using large spoon/fork or pestle, mash a little of warmed beans & mix well, incorporating all ingredients & smooth out the ful, leaving a couple of chunky lumps for texture.
    Serve in bowls & decorate with chopped tomatoes in the middle of bowl on top of ful & chopped parsley going around the edges of the plate & complements the tomatoes.
    To serve either warm or cold, have EV olive oil ready to hand for people to drizzle on their plate as much as they like. Serve along side with plentiful plate of fresh salad items, all chopped & ready to grab, such as radishes, onions, spring onions, tomatoes, cucumbers, fresh mint & olives. The finale is to eat ful medammes with warmed pitta or Arabic flatbread , dunking into deliciousness.
