Santa Lucia shortbread | Christmas biscuits | Italian recipe

Santa Lucia shortbread are small biscuits typical of northern Italy that mothers prepare as a gift for the Saint, to put on the windowsill. The Saint arrives on the night of 13 December, together with her donkey laden with gifts: for this, in addition to the biscuits and a glass of milk, the children leave some hay and a bowl of water. At the end, a small candle is lit, so that Santa Lucia stops, and the children go to bed early. In return they will find some gifts and sweets, as long as they have been good... otherwise they will only find coal!

DOSES FOR 20 BISCUITS
150 g flour
1 teaspoon baking powder
80 g butter
2 egg yolks
40 g icing sugar
1 pinch of salt
almond essence (or other as desired)
