    Dude is such an elegant taste tester, love it! He does a very good job of making everything look so good. I am now going to but an insta pot . I've just received may wok and your cook book.     Wonderful flavor! This in a veggie wrap and the cucs with drizzled sauce comes next. Flo my cooking has gotten so much easier since I got the Oxo gravy/fat separator that flows from the bottom. Amazingly there's never even a single drip from the bottom. Perfect for greasy meats. The screened top keeps my sauce smooth too. Thanks for this terrific recipe.

    I freeze cubed and browned meat for quick meals. It is very handy, and speeds things up quite a bit.

    Try mixing the oil into the meat when you add your salt , this ways you don’t have to worry about your oil drifting over to the side of your pot

    Good morning Flo. I made this today and loved it. I have your cookbook. I had to substitute the rice vinegar since I didn’t have . I used Champagne vinegar. Not sure if that makes a difference. But I totally enjoyed it. I loved the star anise flavor. It was just enough, not overwhelming. I will freeze portions of it since I am cooking for myself. Blessings to you and your beautiful family.❤️❤️❤️

    Flo & Dude, don't fear the _good fat_ (other than the unstable industrial seed oils). Stable, natural fats (saturated & some mono-unsaturated) are good for you. Also dietary fat _does not_ adversely impact serum cholesterol, although they are a bit calorie dense.

      @@FloLum certainly I have, for years. But you two occasionally admonish us (each other?) about skimming they fat off dishes; e.g. in this video Dude said "... not good for your body." That's not so, but I know what you're saying. 👍

    Oh mine, Flo you read my mind, just got back from grocery, bought a huge block of pork shoulder just because it is on sale, was wondering what I am gonna do with it, and here’s your recipe comes in handy, love you for your simple no fuss recipe, though sometimes I modified a little bit to pair with whatever I have in the fridge, but 90% turns out pretty good, thank you 🙏 👍🥰

    I saw a hack for fat removal, use an ice cube. It freezes the fat into flakes. Yours might be too hot but it was cool.

    Vietnamese version of this pork is called Thit Kho. We use fish sauce instead of soy sauce.

    If I reduce or omit the sugar, will it make a huge flavor difference.
    Also, Flo, i highly suggest getting steam spout. It makes it a bit less scary

      The sugar balances the flavour so I recommend reducing or sub with another sweetener but you really don’t want to use any, just beware that it will be much saltier and no hint of sweetness at all.

      @@FloLum thank you! I may try it as is the first time and then mess with it the next time. I'm type 2 diabetic, so i have to decide whether I'm eating rice or sugars. Tbh I'd much rather msg be used in recipes that switched out sugar for msg. Though, it sounds like the sugar has a purpose in this recipe.

    This looks so YUM! Can I substitute Hoisin for Oyster sauce? I'm allergic to shell fish... :-(

      Oyster sauce and hoisin have two very different flavour profiles. If you are not using oyster sauce, just sub with 2 tablespoons dark soy sauce, if you have or omit all together.

      @@FloLum thank you! I used hoisin as a substitute for oyster sauce in Panda Express's Mushroom Chicken and the taste was very similar, although the recipe has a lot of garlic and ginger, so that may have had something to do with it. I'll try it with the dark soy! :-)

    Looks great Flo, but I don't have an instant pot. My husband got me one for my Birthday because I was always complaining when I watched so many video's using them that I didn't have one. Well we did the test they recommend and it failed (plus it scared me half to death) so back to the store it went. I'm 73 years old and I think I'll pass on the pot. Any other way I could make this, slow cooker, stove top, or oven? Thanks for sharing the recipe and have a good day.

      You can definitely do this using a Dutch oven. Follow the browning steps on the stovetop. Instead of pressure cooking, preheat your oven to 300°F. Add 2 additional cups chicken broth or water to the Dutch oven. Cover and transfer to the oven and bake for 2 hours, remove the lid and cook for another 30 minutes. Remove and shred the pork while reducing the sauce on the stove top. Hope that helps.

    I find I do better browning meat in my cast iron frying pan, then put it into the Instant Pot. I then deglaze the pan with whatever liquid I shall be using.
