Hi Y’all! I’m Shelby Bower and I am a cake and sugar artist. I make fun cake videos and I post my creations every Wednesday at 2:00pm CST. I have been a cake artist for a LONG LONG time now and I make all sorts of cakes! Huge dropdead gorgeous wedding cakes, crazy sculpted cakes, little cute painted cakes, cake pops, painted cookies, all types of cookies really! I love making oversized cookies, isomalt creations, even the earth! whatever you can dream up I can make it out of cake! I use cake, isomalt, sugar, candy, fondant, cookies, buttercream (American buttercream is my favorite) royal icing, sprinkles… I even have a special recipe that uses flax seed (eww gross) to make my crazy cake creations.
In this video: In this tutorial I ( Sugar and Cake Artist Shelby Bower) teach you how I make my beautiful naked cakes decorated with fresh flowers. This is an easy beginner cake to make and a great way to learn how to stack cakes. I teach you how to safely decorate with fresh flowers, how to fill your cakes evenly, how to stack a two tiered cake with supports, and how to create the beautiful, simple naked cake icing technique.

Shelby Bower is an award winning Cake Designer and Sugar Artist, quickly earning the reputation as a connoisseur of her craft for her outside-of-the-box design, techniques and fashion-inspired textures. To Shelby, cake design is a beautiful art form with infinite possibilities.
Born in Houston, Texas, Shelby decorated her first cake in high school, and she hasn’t looked back since. Interning with a small fashion label in Los Angeles where she worked directly with celebrities, it wasn’t long before she became well-versed in the design and creative process. It was around that time when she decided to combine her love of fashion and sculpting with the art of cake decorating.

For four years, Shelby proudly served as the Lead Cake Designer for a custom wedding cakery, where she specialized in sculpted cakes. In 2016, she decided to launch her very own cake designing business. This year, she won the Grand Dessert Table Championship at LA Cookie Con, which was judged by the world-renowned baker and reality star Duff Goldman.
Most recently, Shelby meticulously crafted a standing Texas cake adorned with a chocolate state seal, as well as a gargantuan wedding cake that mimicked the appearance of stone.
Shelby Bower not only delves in wedding and special event cakes, she also aspires to start mentoring up-and-coming cake decorators across the globe.

Hi, thank you for sharing this tutorial! I learned a lot for sure. A question though, how far in advance can I put the flowers on? Like if I need the cake delivered on Saturday 3pm, when is the best time to add the flowers?
Mom_of_3 boys flowers should always be placed as last minute as possible. So ideally right before or after you deliver the cake you can put in the flowers. I do it at the venue most of the time.

On the cake? at least a day so you have plenty of time to set the cake up for an event.
What brand of tape did you use to wrap the flowers stems? And tubing?

For a short time, yes.

hey! love your video, planning on making it for my wedding in 10 days but was wondering how far ahead can the cake be made? fro example i was planning on baking my cake 2 days before and coating with a simple syrup and then assembling and frosting the night before? do you think the cake will dry out or be okay? your help would br greatly appriciated! xxx
Hi! Ok so you can actually make this and assemble a few days in advance. I would let the cake chill and the icing get stiff (maybe an hour or so in the fridge) then wrap each tier with an acrylic sheet to keep the cake from drying out. You can also coat with an edible glaze spray, if you have a local cake decorating supply they should have pme glaze spray. This will help the crust showing not to dry out. So you could assemble a few days before the wedding. You could even use plastic wrap but you will have to touch up the icing where the cling wrap makes “wrinkles.” Definitely put your flowers on last. I would assemble at least a day in advance so you aren’t stressed if something goes wrong. If your making a bigger cake check out my diy wedding cake video. Good luck!!!
You taped the bigger flowers stem with floral tape what about the fillers as they are very thin stem what you did to them ?
Floral tape, straws or both 💕
Could you use a sponge cake for this?
Any cake that browns nicely on the outside will work 💕

KiAnna Price doesn’t have to be. I usually bake one day then frost & fill the next.

As close to putting the cake out as you can. The longer they go without water the faster they die.
Gypsophila is toxic...but you cut it and put is straight into the cake.
Or is your Gypsophila different ?
I have always been told never to use, baby breath, toxic. Is this true?

What size are you using for the cake?
A 5” and 7” most of my pans are 3” deep
can i just ask is the only one you use a straw for is the top one and then just tape the others

Absolutely gorgeous! But I don't understand why everyone says to cover the flowers even if the flowers are edible? What's the danger there?
Even if the flower are technically edible they aren’t “food grade” unless they are sold at a restaurant supply. Which is usually only small garnish flowers. The flowers you get at a grocery or from a florist will have been soaking up fertilizer and chemical water. Covering prevents contaminating the cake with gross fertilizer water.
Can the petals of the flower touch the cake? The white looking flowers how come there wasn’t tap on them?
Kareen Waters depends of the flower. I was being lazy and they do not have a thick stem for draining into be cake. Ideally all would be covered like I tell you to do in the video.

Nigel Walsh non toxic. Feel free to use more straws as added protection.
@@TheSugarScoop non toxic and food safe are different. Just because something is non toxic doesn't meant you should consume it.
Nigel Walsh very true. That is why you don’t eat the tape, or the cake boards for that matter. Also why I said you can use drinking straws for added protection.

I thought baby’s breath is toxic? I’ve seen articles that say don’t use it and then I see people using it. Help! My bride wants it on her cake this coming weekend 🙏
It is! I just learned this recently. People use it all the time anyway because it’s cheap. I thought it was fine to use because that’s the way I was taught by a big wedding cake bakery I worked for. I recommend plastic or sugar baby’s breath or a safe alternative. Just send her references to it being toxic
