@Pokemon2019- I have been Guuten Free since 2012. I have a acute sensitivity to gluten, but my dad is convinced it is in my head. I haven't felt better. On top of bodybuilding, I am gluten free, low carb, and fast intermittently. I weigh 165 pounds, & have 6% bodyfat, & have 6 pack abs! Great information Thomas. When I was first diagnosed with Type 2 Diabetes, the Doctor told me to have one piece of wholemeal bread a day. He later sent me to a Diabetes Dietitian. She told me to eat 2 slices of rye crispbread with every meal, 3 times a day. My blood sugars rocketed !!! I stopped seeing her, stopped seeing that Doctor and followed a LCHF diet then Keto. Needless to say, I am off Insulin Injections, A1c's are in normal range and I feel so much better. Lost 30 kilos in the process as well as increasing my kidney function. :) I was able to make this happen by learning from people like you on RUclips. Thank you !!

@Owi Owi that's why you're supposed to eat animal produce from local farms where you know how the animals and the carcasses are treated. Grass-fed organic and all of that is na obvious requirement when eating animal produce. Obviously you can't never be too sure that's why we should all have your own stock of animals. But oh well the world isn't perfect although we can work towards achieving that. If what you said was true then why didn't I instantly die when I stopped being keto vegan? Why did I start feeling better instead of worse, when I introduced meat, milk and eggs in my diet?
I agree that standard mass produced animal produce is toxic but that's not true for the produce of your local farmer. Obviously it depends where you live. Animals give us precious perfect gifts, is man that pollutes them.

@Owi Owi I trust my own experience, I'm not trying to convince you. I was vegan, it didn't work, I started having all sorts of digestive issues. Be vegan if you want, if it makes you feel good. It didn't make me feel good whilst animal produce did. Anyways, I'm not going to talk to someone who's just being disrespectful and angry and a little keyboard worrior. I'm sure you have your own reasons to be mad. Just relax dude. We're just talking on the internet why need to be so upset. None attacked you why do you need to attack and being rude?

    1. Teff
    2. Quinoa
    3. Buckwheat - I had a bad immune response to all these. I tested each one as part of an elimination diet. Best recipe - no grain at all, any type.

    • @someguy43210

There are animal models that shows glyphosate leads to depletion of glutathione which is important for immune function. Buckwheat in particular is one of the crop that is harvested using desiccation method, which is spraying with RoundUp before harvest. There are data that prove a good percentage of crops grown in North America are contaminated with glyphosate because of desiccation, even some organic ones (Tony Mitra).
I recommend looking into supplementing with NAC (acetyl-cysteine) which help boost glutathione and immune function. It also have various other benefits. I have been hypothesizing it is just as beneficial as metformin without the negative effects, which is a statement that has not been evaluated by the FDA, except there an actual medical trial comparing the NAC vs merformin for insulin resistance and NAC shows greater benefit.

Very interesting... but for me, I react stronger to quinoa and oats than I do to wheat. Any idea why? My response is not in the stomach, it is in mass phlegm production the following morning. It takes a good hour or two to clear it all out. Dairy will make me start coughing almost immediately! Is that something different that you could shed some light on?

  • @colleenr2
    @colleenr2 5 лет назад +1

Yeah, Quinoa’s a hard no for me. It has my stomach in turmoil for at least 1-2 days. Also, it should be noted that wheat has also changed. German chemical company BASF owns the patent to the majority of wheat in this country. When a chemical company owns an edible commodity, that can’t bode well for consumers. Basically, I think the wheat has changed more, thus changing how our bodies react to digesting it.

Correction, we haven't evolve enough to consume gluten. We've only been eating it for 2,000 years. Not enough for evolution. Is it really that or is it the way we process wheat in America? We use chemicals to dry the grains instead of old methods of drying and grinding wheels.

@@cbacon7813 count me on the skeptical side too. Grains are a large part of the foundation of the human diet and have been for quite a while.
Maybe the way it's processed or grown is to blame. Maybe it's other factors in our diets. Maybe whatever is making us so fat is also affecting our immune system. What about ancient grains? They are less processed and not so modified than the modern types of grain.
We also have in Norway what we call black oats. Black oats have about 50 percent more unsaturated fat and 15 percent less carbohydrates compared to regular white oats.
I am doing intermittent fasting 18-20 hours each working day. I am looking into Keto/Paleo, but I do not want to avoid grains completely. I love Pasta, Pizza, Hamburger and Taco (meals that has/uses some wheat). So for me to reduce wheat is the better option, and still be able to eat these meals.

This is the worst advice you’ve ever given out. There are no safe grains. The processed starches raise blood sugar faster and higher than even wheat flour. We aren’t evolving, we’re just eating way too much wheat flour because it’s literally saturating our processed food supply, and the gliadin protein can be found in breast milk thus exposing us even as infants. This had a lot of good technical information but ultimately came to the wrong conclusion. Listen to Dr. William Davis. Humans are not meant to eat the seeds of grasses. Archaeological evidence shows that grain consumption has been doing terrible things to human populations for thousands of years.

Wild rice is actually a grass seed. It's just as high in total carb as brown rice, but a much higher percentage of it, like 90% vs 10%, is fiber.

Thank you. What about millet? It is not the same as teff, right?

I am 90% sure that teff is part of the family's millet. It is a kind of millet.

Many thanks for this well explained and highly informative video. One question though: what about Einkorn wheat, which is an ancient form of wheat? I avoid wheat as I definitely notice an inflammatory reaction to it, but sourdough bread made with einkorn seems to be just fine.

I make sourdough einkorn from time to time too and seems to sit good with me! 👍 Super sensitive to regular wheat though!

I have also found that Spelt (another ancient form of wheat) works really well for me. Not sure what his take on it is though

Great breakdown, and easy to follow. You explained it well.
Living in Japan I have to be vigilant when it comes to food. I have made the hard switch to quinoa instead of white rice. That is huge because white rice is integral to Japanese culture. I still eat some, for example when I go out to sushi (would be sacrilege to make sushi with quinoa).
Anyway, great breakdown!! Will share for sure. I know since giving up bread and most dairy, I am feeling better (and have dropped a lot of weight).

Wat is your perspective on millet? I like the taste and could I use it instead of buckwheat or quinoa cause I really dislike the taste of those two. And what would be better, wild rice or millet?

As a Coeliac staying Grain Free is easier, other grains eg rice, could be cross contaminated and depends on how and where they’re stored? Gluten spells a trip to hospital for me. Thanks for the info’ though. 🥰

Can you do a video on sourdough bread? I've heard from multiple people that sourdough bread is okay because the fermentation breaks down the gluten and makes the minerals and vitamins more absorbable. I am so confused, they lost some weight as well on keto, but I don't know if sour dough is okay or not? They said it's low on the glycemic index.

Can you comment on the "sourdough" bread craze? For instance, there is an infodemic of misinformation out there right now that fermented sourdough (the homemade kind that takes 48-72 hours to make) somehow bypasses all the negative aspects of wheat. Is that true? Does home-made sourdough bread still cause inflammation?
Again for clarification, I am specifically referring to the homemade sourdough bread where a person soaks the wheat with water overnight first, then adds a starter of some kind the next day, then bakes on the third day.
