INGREDIENTES

Dry Mixture:
200g almond Flour
45g coconut Flour
2 tbsp desiccated coconut
2 tsp baking powder
1 tsp baking soda
1 pinch of Salt
2 tsp ground cinnamon
Wet Mixture:
4 tbsp ground flaxseed
1 cup cold water
1/2 cup erythritol sweetener (adjust for your taste)
80g melted coconut oil
1 tsp vanilla Extract
1 tbsp lemon juice (or apple cider vinegar)
1 cup shredded carrots
Coconut whipped cream:
2 tins chilled coconut cream (400ml each)
powdered sweetener (I use erythritol)
Toppings:
Chopped walnuts
Shredded carrots
Shredded ginger
DIRECTIONS
---------------------
1. Prepare “flax egg” by 1 cup of cold water to the ground flaxseed. Mixell and leave to rest for 15mins.
2. Sift all ingredients for the Dry Mixture into a mixing bowl.
3. Add all the remaining ingredients for the Wet Mixture (bar carrots) into the same bowl as the “flax egg” and mix well. Add in the shredded carrots and whisk everything together.
4. Combining Dry and Wet mixture together using the “folding” action. This helps to retain the air in the mixture.
5. Grease a 8x8 inch cake tin with oil (line the bottom of the tin with a baking sheet). Pour the cake batter into the tin and smooth/even out the surfaces.
6. Bake the batter in a 180C/350F preheated oven for 50-60 minutes in total. At around the 30 minute mark, place a layer of baking sheet (or foil) on the top of the cake tin to prevent over-browning. Bake for the remaining time.
7. Leave the cake to completely cool in the tin before removing the cake.
8. Divide the cake into two equal pieces to create a double layer cake or simply leave it as a single layer. Cover the cake with the “coconut whipped cream” (instructions below). Options to sprinkle chopped walnuts, shredded carrots and fresh ginger as toppings.
COCONUT WHIPPED CREAM

Scoop out the “cream” part of the coconut cream only (skim off coconut water). Whisk the chilled cream till it’s light and creamy. Incorporate powdered sweetener for the sweetness.

I made muffins from this recipe and they came out AMAZING!!! 2 cups of almond flour for the 200g, 5 plus 3/4th tablespoons of coconut flour for the 45g, and 6 tablespoons of coconut oil for the 80g. Your welcome! 😋

I dont get the dislikes. Im celiac, my SIS is vegan and my MIL has recently been diagnosed with pre-diabetes. I still like to bake, so... I've been trying new things and this seems amazing
I made this cake twice.
The first time exactly according to the instructions. It was tasty but I lacked seasoning. Maybe because I'm used to Dutch/Scandinavian carrot cakes that have more hot spices.
And I didn't feel the carrot enough either.
The second time I already felt more confident to change a little -
To reduce carbs, I replaced the almond flour with ground walnuts.
In addition to cinnamon, I added freshly grated ginger, half a teaspoon of cardamom and half a teaspoon of ground cloves.
Instead of one cup of grated carrot, I added 2 cups.
Since ground nuts are more moist than almond flour and I put more carrot so I added another 2 tablespoons of dry coconut and 2 tablespoons of oat fiber.
The second time I gave up the cream because I went a little overboard with the calories recently...
I recommend these changes, the spicy version is tastier not only to me but to everyone who has tasted it.

Be careful in the US because "coconut cream" or "cream of coconut" in tins usually has lots of added sugar and is intended for cocktails. Where as "coconut milk" usually has no added sugar but still has the creamy coconut solids on the top.
Actually coconut cream doesn’t have any sugar added. Only the cream of coconut has it.
Reading the labels before purchasing is the clue.
In CA you can get good 0 carb canned coconut milk for .99 a can at Grocery Outlet.

I made this cake. Don't like cinnamon, so substituted nutmeg. Still delicious and very filling. Next time, I will add walnuts and some grated ginger. What a great recipe. I would serve this to non-keto people with confidence. YUM!

Baked this last night ready for a lunch with a friend tomorrow. I've not put cream on yet, going to wait until nearer the time but cut them into individual portions ready to stucking with cream! Just been nibbling the ends I won't be serving - just to check what it was like. Texture is a little less spongy obviously but it tasted just as good if not better than regular carrot cake I've had, really looking forward to having this with cream but it's still a very good cake without if anyone likes a plain piece. Will bake this again, thank you. 🙏 By the way, I've been baking one or two recipes from your videos every day the past week, and quickly I've already gone through a whole kilo of almond flour already. Keep going back in the kitchen thinking what else can I make today...cannot stop baking. 🧡

I’ve made this several times. It’s a lot of time/work, but totally worth it! It makes a lot and stays moist for a week in the fridge covered up. I do have to bake it much longer than suggested, maybe almost twice as long. This is one of my favorite things. If I didn’t know it was vegan/grain and sugar free…I’d still be blown away!

I love your videos. Thankyou so much. I just want people to know that erythritol can cause very severe digestion problems. I know this because it does so for me. Companies used to have to put a disclaimer regarding this on their packaging but somehow they have managed - I guess - to eliminate this requirement. Now it is all over the place and things that sound like they are stevia for instance actually oftren have erythritol in them. I found this out when my favorite stevia soda, added erythritol to it and I got quite sick from it. Even rhings like monk fruit are actually more erythritol than monk fruit now.There can be people eating this who have no idea that their intestinal problems are caused by the erythritol that has been added. I make everything with real Stevia and it woks just fine.
You're quite right Kathleen, the one I use regularly (Truvia) does give the impression that it's Stevia-based. I learned from the viewers that it wasn't the case. But I don't seem to have digestive issues with it so it's currently the sweetener of my choice. I think when it comes to keto sweeteners moderation is the best policy.

This is a wonderful recipe! I also add nutmeg and ginger in addition to cinnamon and I love it! I've also subbed the water for vegan milk, and that was great. Even substituted the carrots for sweet potatoes, and it was amazing!
