    I found a great thickener for gravies and cheese sauces when carnivore is collagen powder. Works just like flour

    I normally don't leave reviews but I have to for you. I want to say thank you for posting the recipe in the description. I know it may seem to other youtubers that if they do list the recipe no one would watch their videos, but that is not the case. I watch all your videos all the way through and I still read the description. In fact, you are the only carnivore recipe maker that I actually look towards for all my wonderful dinners and "deserts". I think it shows your care for your viewers and I wish that all youtubers would do this. Sometimes we don't want to watch half a video to find out we can't eat what they are "recepieing" about because they add in an ingredient that we are trying to avoid. Again, Thank you!

      Yes!!! You are absolutely correct in your statement. I’ve only seen this 1 video of his, and I just made it tonight! Sooo DELISH! I wouldn’t call it mac & cheese, but it is very tasty. I added salt and pepper to the chicken egg mixture. (which you didn’t do, and I was wondering why?)
      And next time I will add CRUNCHY bacon bits into the recipe! And I will add more of that Chicharrón on top. I think that would be most excellent, because that crunch is a really nice mouth feel. ❤❤ and now I’m going to look up your other recipes.

    My 7-year-old daughter and I made this for lunch. Instead of ground chicken, we used ground beef and used sharp white cheddar with the heavy whipping cream. Zero carbs, high fat deliciousness. Next time, we'll make the crunchy topping. Thanks for the awesome recipe.

    I added a little bit of melted butter to the chicken smoothie. Helped to firm up better in the fridge. Pipped in an icing bag and used scissors to cut them. Was less messy.

    just made this tonight and it was awesome. I'd like to note that the chicken egg smoothie can be made into homemade nuggets/popcorn really easy if you fry it in ghee. Just season it a bit and you've got nice little nuggets. Frying it definitely gave it a firmer texture but they didn't absorb the sauce as a side effect. I seasoned with ginger and a garlic/onion mix with salt and pepper and the chicken flavor was distinct from the sauce.

      Reheating this dish is something else. I don't recommend a microwave as it really dries out the pork rind covering and causes the cheese sauce to separate slightly. Better to put it on low heat in an oven because it was a solid brick when I took it out of the fridge.

    I made this tonight for dinner for my boyfriend and I. While we've never made it before, I just happened to watch the video couple days ago and last night when I was at the store there was ground pork on the markdown rack! I bought it and thought that would probably work just as well as ground chicken. It turned out deliciously! Oh, and because we like spicy stuff, I used the Mac's brand ghost pepper jack flavored chicharrones/pork rinds for the topping and also added some ground jalapeno powder into the cheese sauce. All-in-all, delish!! Oh, and just to make it easier, when I put water in my pot for the double boiler, I just added extra water, so once my cheese sauce was done, I took it off, added salt to the water in the pot and then used it to cook my meat in, rather than getting out of separate pan. Worked great. Thanks for the recipes!

    Just came to add that if anyone thinks they'll be making this alot or have trouble with the emulsion process. You can buy sodium citrate which is a great emulsifier. Simply bring water to a boil, add tsp to tbsp depending on Quantity of cheese sauce you're making and then add cheese and stir. It will naturally melt and emulsify with little effort and no risk of separation

    I made this last night. Only modification I made was that I used a couple of sandwich bags instead of the gallon size. It was amazing. Your cheese sauce reminded me of Stouffer's. Made two servings.

    With a tiny bit of tweaking this was a 10!! Thank you for sharing! I used ground pork because it’s what I had and in the breadcrumbs I added Parsley. Super great recipe and I finished it up in my air fryer. Will make over and over😋

    I made this today using 3 egg yolks in the chicken and it came out amazing, the chicken probably would have been denser and held together a little better had I used the whole egg, but it was SO DELICIOUS 😋 my family loved it and said we need to have this dish once a week.       I feel that, lol. Though, I've been on that egg bowl (sometimes I chop up a bacon, or a sausage, or a steak to mix in). But man, I could eat that all day every day to be honest. Mixing it all together makes it so easy. Still looking forward to giving this a shot though.

    (Harry) Oh man, I really want this... I was a big Mac & Cheese guy back in the day of being 260 lbs, now 165 lbs but I've had to cut out a lot of stuff as others have done. I'm going to try this though because I want to so badly. See if I can talk the wife into it... Great show again.

    Sodium citrate is great for making a smooth cheese sauce that doesnt coagulate or separate as it cools.

    Thanks for the recipe! My sister loves mac & cheese but i stopped making it for her after her diabetes got worse. The chicken-cheese gnocchi dough helps a lot.
    I'll try crispy fried chicken skin instead of the cracklings since my family doesn't eat pork.

    I would like to try making macaroni with small peeled shrimp skewer them with wood chopsticks to mimic the macaroni dehydrate them then rehydrate them in chicken bone broth I make a killer cheese sauce using equal parts turmeric finely ground black pepper Tapatio and sodium citrate add a cup of whole milk heated in a pan just below the boil point about 160F add the spices and sodium citrate then reduce the heat and add 1LB shredded extra sharp cheddar cheese.

    For those of us who don't have a food processor the best way that I had from grinding down pork rinds is to put them in a plastic bag put them on the floor take a heavy pan if you have a cast iron skillet that's the best and just smash that bag .....that works

      Remember that food allergies/intolerances can be SIBO! I treated for SIBO following Dr. William Davis protocols and removed all my egg white allergy and egg yolk intolerance. Can eat 3 eggs for breakfast again!!

    So I have made this recipe 3 times each time a little different. I prefer to do this with pork, not a big fan of chicken. Also I had about a tbsp. Of cottage cheese Leftover from another recipe and I tossed that in and it was a little more fluffy. We both liked that.

      @@CarnivorousChef thank you for the warning I'm definitely trying to stay in a deficit. I haven't been able to eat very much on this woe I've noticed. I have about 4 eggs, 6 strips of bacon and either a 1/3 lb burger or a 12 oz ribeye per day everythingcooked in tallow or butter. I do intermittent fasting as well, and i don't find myself hungry on this woe. I love it. I don't do much dairy as I can't tolerate it but I will keep this recipe I'm mind for a cheat or something like that.

      @@CarnivorousChef Love your recipe! It's the first video I have come across from you. I will definitely be watching more. Just a little note, I don't think that calories matter all that much on a carnivore diet especially if you are eating 100 percent meat and animal fat. The calorie model is not really a proper measure of the energy available from food anyway and the calorie in calorie out arguement for weight lose is completely debunked.
      I'm not trying to have a go at you it's just I've learned a lot lately about calories and it appears that most people are still pushing the old CICO arguement that just don't make any sense.

      If you have diabetes you might want to check the carbs and the sugar content. but it sound good.

      @@keithjohnson5190 you can do it if you have diabetes just find the items with 0 carbs and sugar hell even if the carbs have 1% but the daily is 0 is still good and on top of that if you are on carnivore diet than you don't eat that much at all I can hardly eat 8oz of anything I just get full pretty quick.

    I too chose to use ground beef since I don't have any ground chicken in my home. I also had to experiment since I also don't have any heavy cream in my home. Go figure, eh? I used 1 cup of sour cream with 2 tbsp of water, added in what cheddars I had (Mexican and Lactose-Free Extra Old Cheddar). I skipped the "au gratin" since I prefer mine without. All in all, it turned out beautifully. Eventually I will try with the HC but my way is good to the palate.

    Wow. This has been published for 3 years and I just only now saw it. this looks reasonably "easy" enough. I wonder if I could do this with the ground turkey already have. i wanted to use it for healthy dumpling filling but this seems like a good use for a very lean meat. Thanks. Gonna go see what else you have shared.

    I've made this recipe before, it looks incredible, but I would recommend mixing chix w some sausage meat. Even w the nice cheese sauce I was not satiated a short while after eating.

    Thanks for the awesome recipe!!! I don't follow a carnivore diet but do try to stay fairly low carb so I usually don't eat Mac n cheese. My mom sent me this video and I had to try it! Mostly I was hoping it would be a way to get my 2 year old to eat meat. She refused to try it.. but my husband and I loved it! The "noods" are spongy like you say in the video so to me it tastes like chicken nuggets covered in cheese sauce - very tasty!!

      Update: I left my kid's plate out and she eventually tried this and liked it!! So even my two year old liked it!! Thanks for helping me get my kid to eat a healthy meal!!!!
