    I am indian and I can say this is the perfect way to cook roti. It needs some practice to roll the dough evenly flat and round. It took me 2 months to learn it. Very well done. Your roti is very good.

      In india it's kind of family secret... even my great grandma use to use boil water to make Roti softer . Even you can use boiling milk...

      @@liuyangyang 我认为小高姐已经属于专业人士了。技巧上,固然专业厨师更为娴熟;但专业厨师通常只擅长一两种菜系。像小高姐这种钻研过世界美食的厨师并不多,因为一般的专业厨师不可能为了一个菜反复试错,否则饭店出品率太低,开不下去;也不可能太过于广泛地尝试各种新菜品,因为一个饭店通常只有一两种主打菜系,大饭店不同菜系会雇佣不同厨师。现在很多饭店确实开始频繁更换菜单,后厨下班以后也经常会组织研究新菜品,厨师长一晚可能要品尝几十种新菜。但传统烹饪教学有点跟不上精致化的饮食需求,很多饭店做来做去还是同一种口味。另外,中餐厅的聚会性质对菜的种类和出品速度要求很高,后厨不得不长期使用预制半成品等方法加快出品,很难精致起来。

    还是小高姐的instruction靠谱,我follow了n个印度阿姨/姐姐/阿婆的recipe,一直都没有达到全部吹起来的效果。今天按照小高姐的配方和步骤做了一次 没有用明火就成功了 好神奇! 虽然擀饼的手法还有待练习提高,但是好有成就感。感恩🙏🏻

    在外留学好像已经半年没回家了,几乎都是半夜睡觉之前打开小高姐的视频,尽管有的视频已经看了自己都不知道多少遍了,但是不知道为什么,看小高姐的视频有回到家的感觉,喜欢听着小高姐的声音入睡,让人很安心。

    剛好前陣子做了pita,看到小高姐的roti驚為天人,就是我心目中的柔軟烤餅啊!
    今天也試做了,很成功!照著小高姐說的訣竅來做,桿麵時成功轉起來,很輕鬆就能桿成圓餅,實在太開心了!
    嘗試了平底鍋和烤架兩種方式,還是上烤架更能鼓得飽滿,充分撐開麵體。先前在餐廳吃過甜口味的,下回想嘗試加點糖或淋點糖看看。

    Nice. You got it exactly right. Just the way we make it. We usually use clarified butter instead of butter, but butter also works. Well done.
    Also, I made whole wheat bread with your recipe, and it worked this time. I put a bowl of water in the oven while baking it, the bread was soft and the crust not too hard.

      Not clarified butter but Ghee, Melted butter is not ghee, butter has to be cooked not just melted to be a ghee

      @@daddu1983 Ghee is called clarified butter in English, it does not mean melted butter. When u cook butter the ghee is separated from milk solids. Thus Ghee is called clarified butter.

      +1,我在超市看到atta flour的蛋白質含量特高,以為跟高筋麵粉一樣能做麵包,回家一做才發現怎麼幾乎沒有筋性😣
      5kg裝啊,最近一個月做幾次roti了,不知道何年何月才能用完,終於看到小高姊說陸續會發一些這個麵粉的用法,有救了。

    小高姐,今天我跟妈咪隔离在家做了这个饼。超级好吃,又很简单!我们家是南方人,很少做面食而且一般做面食很少会成功。这个recipe特别简单,我们的饼很香,texture is perfect. 感谢小高姐分享的recipe~
