I took to increasing the yolk/sugar/egg mix and the whipped cream by 50% for when I invariably use too much, but this stuff is great. Other note if you're using packet gelitine because you don't have access to the sheets, try about 1/2 packets, it tends to work a bit better, mix with a small amount of warm water before mixing in.

That's why they're 'similar'. But they're also opposite, because the HidaMari channel seems much calmer and structured whereas the Kiwami channel has a sense of chaos and unpredictability to it.
