Update: I kept the mousse in the fridge for more than 12 hours however after removing it still seemed a little underset, so maybe I might increase the gelatin more next time. But the chocolate and almond next set nicely but you have to work quickly. Get someone to help you when you unmould and pour the chocolate and quickly set it in the fridge. The taste was really great! Make sure to follow the instructions for sponge exactly to get it well risen. I guess only change I would make is add more gelatin. Besides that great recipe and easy to do :) everyone loved it! Definitely something more fancy than a cake and for chocolate lovers.

I agree. Also, the leftover chocolate could be chilled flat or molded and cut/shaped to garnish the cake.

ohhh maybe it wont break if you use fire to heat the knife instead of hot water

@@c17nav ohh i didn't know that can happen. We don't use the knives from the store so I guess the metal on ours can handle more heat
