The filling, I thought, would be good made like yours - without a crust. The filling ingredients are: 1 cup of brown sugar ; 3 tablespoons of all purpose flour, a pinch of salt; one can of evaporated milk and 2 1/2 tablespoons of butter with a sprinkling of cinnamon on top. My question is, what can I substitute the flour with? Can I use equal amounts of almond flour?
I made this with homemade pumpkin puree, and it was a watery mess. I strained the pumpkin pretty good, but you can't ever get it as thick as canned puree. Was more of a pudding than a pie. The pumpkin pie flavoured pudding was edible, but I would not make this again.
Dairy allergy here too. I used 2/3 cups macadamia nut milk. Turned out perfect. It would work really well with coconut cream as well. I've tried various brands and find cha's organic coconut whipping cream the best.
I put a layer of toasted walnuts on the bottom for a “crust”

i need cream and sweetner alternatives. i'd use dates for the sweetner but cream i have no idea.

Horrible recipe. It came out wet and the brown sugar created a crystallized texture.
