Thank you for inspiring me to make some preserves with my peaches! I just wanted to tell you that the reason the peaches floated is that you have to use pure cane sugar. I learned this from a friend who has been preserving for many years.
I was reading recipes by a certified master food preserver, Georgia Varozza and she said, let the jam sit for 4-5 minutes, gently stirring frequently so you won’t create air bubbles in the jam. This will help the bits of fruit to suspend throughout the jam instead of collecting at the top. I hope this helps you. 😄
It's nice to see someone else keep their clean jars in the oven until they are needed. Just finished my 4th batch of jelly and now switching to peach jam preserve.

My grandmother canned everything so I don't remember the Bama peaches that you mentioned. This is the second time that I have watched this video along with several others on canning peaches preserves. I love your method of canning so I am going to use it; however, I am going to use frozen peached.

To me, a nice kitchen (not necessarily gleaming stainless steel) is essential, even if the stove and oven are a little out of fashion, as long as they are sturdy and functional, I am happy. Peace.
I love this video so much. Everyone just posts the A reels and never put out the honest truth that sometimes inevitably happens, which can be dissapointing but makes it all the better to get to how you want it to be which is the fun part. I decided to try this since my landscaper brought me 10 pomegranates and now I'm seeing there's more trial and error than I thought. Currently doing the "maceration" part so they're sitting in sugar, lemon and lime and I'll probably mix in strawberries to add some thickness and apple for extra pectin. Thanks for the video!! Can't wait to try a peach recipe.
I wanted you to know that I made the strawberry bread and was told it was the best bread that I have ever made. I did put a pan of boiling water in the oven under the bread. I must say that it was delicious. I am going to can some cinnamon peach preserves, but am going to use canned peached purchased at Sam's. Thank you so much. I truly8 enjoy your videos.

(JUST A SUGGESTION) - I think next time double the fruits or use an immersion blender to chop up the fruits into finer bits to stretch them so you’ll have a more even fruit to liquid/ jelly ratio.
Do you know if it’s possible to easy peal peaches that same way we do tomatoes, as cut an x on the smooth end, dip in hot water for a minute or so, when the peel at the cut curls, remove from water, then the peel just comes right off?
I peached all day today. I put up 15 pints of pie filling and will do a few jars with simple syrup tomorrow. Your preserves look so pretty. I hope HEB puts something just as good on sale soon! Those peaches are so good. Lol.
I'm up north, where HEB won't go by we DO get Palisade Packs from Western Colorado. I bought two boxes a couple weeks ago and have been watching canning videos while I fumble through my own. 😂 I noticed the peaches this year are MUCH larger, and my ham was MUCH looser. I prefer a little syrup in my peach chunks, rather than via versa, too. I'm glad it's not just me... and I hope they tasted delicious as long as they lasted regardless! 🍑
My peach preserves did the same way and I used the same recipe. I just stir them when I open a jar. Even though mine turned out just like yours, they are still delicious.
Sarah Ussery mine are delicious, too. Didn’t bother the taste at all! I did make another batch and doubled the amount of peaches. It didn’t set up as firm and I really liked it better. And I cut the peaches smaller. 😄

Can you please explain how you diid the peaches the old fashioned way , that you mentioned at the end of this video. I do pear preserves similar to what you were saying, I think.
The old timers just pealed the peaches....covered them with sugar...plus some.....cooked down until the thickness they liked, They did figs the same way. You can add a smidgen of water if you want to.
Because this was from 3 years ago and I’m just watching now….I have a few questions. How long do you think you boiled it after the sugar was in? And how long was your water bath? How long does it take to cool? Do you cool outside refrigerator first? Thanks so much! It’s going to be fun!
I always go by the insert in the surejell box. It gives explicit times. Water bath 10-15 min. Always let set on the counter overnight. Completely cool before you refrigerate. I hope this helps!!! Thank you for watching!!!
looks great miss gay! here in arkansas there has been a run on canning supplies. go figure! so here i am ready to do round 2 of tomatoes and i cant find jars, lids, or anything. so i guess tomorrow i will be freezing tomatoes instead of canning tomatoes! god bless!

It gets like that here in MS every year. When I find them, I pick up a flat or two all year long. And I have a cabinet full of rings & flats. Tried my first peach perseveres yesterday. Mine aren’t clear and jellied. I did not use sure jell though.

Don't beat yourself up over the fruit content of your preserves, you will find it was the sugar content in it and so next time use the no/low pectin and recipe. I'm trying to find out if I can use less sugar and more regular pectin and get the same result husband has been told to watch his carbs simply because I don't want to keep dashing out to find low sugar pectin.

I'm thinking that if you had cut your peaches smaller, you would have had more peach in your measuring cup because of the way things settle (like you could get more minced onion in a jar than if you tried to use quartered onions). In any case, I'd sure love to have some. I'll bet it's delicious!

I am not sure if theres a card at the end, or, if I used the surejell instructions. When mama did her own thing, she'd cover the peaches with sugar totally.....and cook to desired thickness. I'd have to go back and watch the whole video.
I cook the peaches a little bit just to warm them and mash them a little then do what the sur jel tells you to do and they dont float as bad. but those look very yummy! I will be peaching it tomorrow. I spent the day with strawberries today.
Never knew about the jars in the oven. I been watching video all over and some old worlders were setting a towel in a big ol pot and would boil them. 1700s and 1800 also would use the sugar stir a bit and let it sit and add more. It was a crazy amount of sugar too 1lb to 1lb.

When you open a jar can you stir the preserve, it might spread the chunks evenly?
Some of it is set up.....but, I did that and it is delicious like a thick sauce with peaches in it!!!

can you boil your jars with the lids?
When you water bath, the whole thing has to be under water for the designated time. If you mean to sterilize you don’t boil with lids on…. Open jars
How much sugar did you add? I seen 12 peaches and a box of pectin but not sure of sugar.

They ripen quickly. Like a day or two. Better if they’re ripe.

sweetie its 4lbs of peaches which chopped should measure out to be 4 1/2c and 2TBSP of fresh lemon juice

Never knew about the jars in the oven. I been watching video all over and some old worlders were setting a towel in a big ol pot and would boil them.
1700s and 1800 also would use the sugar stir a bit and let it sit and add more. It was a crazy amount of sugar too 1lb to 1lb.
