    You can also use lemon juice doesn’t change the color or the taste. Your fruit will not brown. Not all of us have all the money to buy all the special ingredients. Like me shouldn’t be by another person all you do is put them in hot boiling water for a minute with a tablespoon of baking soda. Scoop them out if you don’t want to pour them out and they won’t slip out of there’s cans with or without a paper towel/rag. I learned this message when I was five years old and I have canned peaches for the last 62 years this way!

    Great video. You made canning sound simple, non stressful, and easy. I just moved to a farm house, and our peach trees are dropping their fruit which we are scrabbling to retrieve. Everything about living and managing a farm. is new to us. So, my husband and I have been picking up the peaches that just fell because they are ripe, and now we are picking peaches off the tree since most of the peaches look "well done". Our conundrum was, "Oh no, now what? There's no more room in the refrigerator!". I read several books on canning - with trepidation- and then I found you which lessened my stress. I filled 3 quart size jars with peaches, and now we have room again in our refrigeration. Thank you for all your information and advise!!!

      My mom did canning a little different by when she took all the filled canned jars out of the canner, she had a pan to remove about half of the hot water and put cold water in to help speed the next canner of uncanned jars in . Mom work in a sewing room full time and came home for an hour lunch break. She made heavy syrup and let it sit to cool. Our family consisted of 5 daughters and 2 parents. Large garden and many mouths to feed and many hands to do the work.

    A fast way to clean peaches is to bring the water to a boil, remove from heat, dump in the peaches and 1 Tbsp of Baking Soda. The water will fizz and then turn dark. Leave the peaches in the water for one minute and then drain. The skins will be fuzz-free and you can remove them by wiping with a paper towel or clean rag. The skins should slip right off.

      Yes I hate videos where they assume you know all the terms and how to do everything. Like why do you think I’m looking up the video? Lol. Also we need makeshift tools. Not everyone has all of those things.

    Lemon juice or pineapple juice is also a great way of keeping the fruit from turning brown. :)

      I used lemon juice however, the top portion of peaches still turned brown and looked gross, it didn’t effect the taste but it was unappealing. Any suggestions?

    I chose your recipe and I'm glad I did. Didn't blow off some of the bottle bottoms in the cooker like I did 4 years ago. My peaches were so small I had to make the half cut before I skinned them, because they were to slippery to hold to cut them. I liked your idea of putting a full half cup of sugar in each bottle because my peaches were not sweet to begin with. They fell off the tree early this year, so I had no choice on the size and sweetness. Think the tree is old and sick. Thanks for the advice!

      Maybe it needs more fertiliser or water? How old is the tree? They only live like 30 years I think so it may be old.

    I can peaches somewhat the same way. I fill the quart jar 3/4 of the way full with peeled and cut peaches add between 1/4 to 1/2 cup of sugar fill the rest of the way with peaches and add hot water leaving the proper headspace and process as usual

    Thanks. I used some tongs and a potato smasher to remove the jars in the end and it worked great. We will see how these taste in six months.

    I found using one of those Chinese metal ladles worked the very best for taking the peaches out of the hot water. It’s wire around the bottom and a bamboo handle.

    I got cling peaches. More work but just as good. I use a peeler and cut them from the pit.

    My mom and I had to can peaches mostly in pint jars as they were my dads favorite fruit. One summer he came home with 18 bushels of them Yes, I said 18 bushel baskets of peaches
    Mom start sorting thec rippest she could find. First she scalled them so I could peel them, I put them in cold water while she started the heavy syrup so when cool enough to handle she packed the first canner full. She put all water related jars while I kept skinning them .We had several canners ready so when that bunch was done, she replaced them with another load. She kept sorting them in the meanwhile. Took is a lot of days to can them all. But we didn't waste sny.

    Question 2: Quantity of peaches per 1 quart jar? I get my peaches at the local farmers market, and they sell peaches by the pound. I was wondering how many pounds of peaches I'd need to fill a quart jar so I can do the math? Thanks for this great video!

    I learned the hard way not to use beet sugar for canning. It has a higher number of reducing sugar units than cane sugar. My peaches turned brown even though I used Fruit Fresh. I remembered later that my mother always used cane sugar for canning. Her peaches and pears did not turn dark. I'd like to know if pineapple or lemon juice block the chemical reaction that occurs with beet sugar.

    Hi Angela, You make it look so easy. My Grandma did this forever, and her house smelled soooo wonderful. But you may have inspired me to give it a try. By the way about your Book? do you have the meat drying instructions in there? Because I enjoyed your 18 century Food Preservation Vids. I am a Long Distance Hiker and would like to dry pork or beef, for a trip. Thanks! John.

      Give it a go! The bottled peaches are sooo yummy! Yes, I have basic food dehydrating instructions in the book, including drying meat, although none of my 18th century projects are included in it.

    When did you put the fruit freshener in the peaches? Thank you for sharing your method of canning peaches and the type of peaches you use to can. Too bad cling peaches are my favorite to eat. But do to health issues I can't can fruit any more but I still love watching your type of. Videos. If buy stuff my younger sister will can for me which is super sweet of her. And I know longer live near where peaches grow readily unless I travel over a 100 miles.

      The fruit fresh was mixed in the soak water that I put the peaches in before they go in the bottles.

    Hi! Can you stored canned peaches inside the fridge. It was too late I made a mistake boiled 10 minutes in canning pot. Some friend gave me wrong information. Suppos to be 45 minutes. Thanks

    I wouldn’t use my city’s tap water. It has chlorine and Flouride and other junk like pharmaceuticals in it (almost all city water does). Wish I had a well! I filter it in a Berkey and then heat it to make the syrup. Thanks for a really good video. I’d forgotten the details in the process. That’s a great way to make the syrup!

      The most natural way to get crystal clear water is to take some alum and give it a little swirl in the water pot....leave for a while and then strain through a muslin cloth....

      Most places in the US is under 1000 feet but where do you live? I googled my city name elevation and it came right up

      I've heard that pressure canning kind of destroys peaches. Just use your pressure canner as a water bath canner. It's a huge pot with a lid, after all. Just don't screw down the lid or worry about bringing it to pressure.
