A double helping of cavatelli and tagliolini pasta from Calabria! | Pasta Grannies

  • Ada makes cavatelli with porcini mushrooms, while friend Nunzia makes tagliolini with chickpeas. Both are delicious and an example of how, if you have great ingredients, recipes should be simple.
    Big thanks to the Centro Sociale Anziani "Don Francesco Leone" of Mormanno, and its President Caterina Regina, for hosting us.
    For the recipes':
    Cavatelli dough is 200g semolina flour, 100g 00 flour, 150ml water
    Mushroom: 3 garlic cloves, sliced, 15g parsley, chopped, 1/2 teaspoon salt, 750g porcini mushrooms, or 750g ordinary mushrooms and a tablespoon of dried porcini, soaked in hot water, then minced.
    Tagliolini dough is 200g each of semolina and 00 flour, 2 eggs and around 80ml water.
    400g cooked chickpeas are fried with garlic, 1 teaspoon oregano, 2 teaspoons of sweet paprika, and you could also add some peperoncino/chilli if you wanted.

    this makes me tear up. my mom's name was Ada. It caught me by surprise today. And the way these ladies have the passion for what they do BUT they get dressed up and are always conscientious of that.. Got the jewlery rocking.. etc. And they care. Unlike me (and many) in the US who lately are lucky we get out of Pjs to even go to the store etc. A travesty that would be in Italy!!! ;) I could watch these episodes ALL DAY every day

      All Italian women are like that. My cousins in Rome, older and younger, absolutely will not wear shorts or sweats out of the house - they would be shocked to see our American girls out & about in pajama pants, etc. I think they put on makeup just to take out the trash. 😉

      @@elisaastorino2881 I agree. I suspect it's a European thing. I had a good friend that lived there for a few years, because of her husband's job. She told a story about going hiking with her friends. She being the only American was dressed for comfort, while her European friend was dressed up like she was going shopping. It's amazing the difference.

    This brings back memories of my last trip to Italy, when it was mushroom season and I ate fresh porcini everywhere I went. In Florence, I had something very similar to the first dish. Such a shame that we can't get fresh porcini in America!

      Depends where you live. Actually, they grow all over the country, even around San Antonio Texas. I bought them at a farmers' market in Portland Oregon, and they can sometimes be found in higher end supermarkets...used to see them a lot in Austin. The problem is that porcini cannot be cultivated, they can only be foraged in the wild, so they don't fit the US model of commercial agriculture. And not many in the US have the tradition of foraging for mushrooms. A friend of Italian descent used to tell me that his grandparents and great uncles, much closer to their Italian origins, used to get porcini around San Antonio, Texas back in the 20s and 30s. The mushrooms are still growing there, people just don't know about them!

    Pasta with porcini is like pasta with fish - never cheese. By the way, the last time I was in Rome before Covid the people I know in my favorite restaurants said that more than half of the porcini were then being brought in from Spain.

    In the last five years I have worked chickpeas into my diet making chickpea curry, using them in salads, making caramelized onion hummus... and now I have a new recipe to work with. Thank you Vicky and the entire production team for an inspiring recipe and detailing the procedure.

      @luanllluan , sir(( forgive me if that is not a female name, I've never seen it before) I'm 58 yr old Irishman from rural Kentucky, U.S., the most neutral wood used for cutting boards/pasta boards here is white oak, or regular oak, etc... please do not use red oak. Walnut wood will work also , but is more expensive. I hope that helps you, God bless you & yours, Amen, I now change that to sir, I'm sorry

    Oh gosh, pasta with chickpeas -- why haven't I thought of that before. I _so_ love chickpeas... I'm afraid I'll never be able to do the porcini recipe because good, fresh porcini are made of unobtanium where I live. But chickpeas, paprika and pasta, that's doable!

      Look for a similar recipe from Puglia called ciceri e tria, a very simple, almost primitive dish with the added treat of fried pasta strips for the topping, to add a textural variation. I make it and add LOTS of preserved red chiles to spice it up, otherwise it is just too plain tasting...

    Loved this video! Not only my 2 favorite things, mushrooms and chickpeas, but the grannies Ada, and Nunzia, (and husband!) were such lovely and delightful people. Will try the chickpea recipe, but will have to substitute whatever mushrooms we have available in the US, white, or maybe portabella, would favor the later.

    Zafferano is saffron, Paprika is paprika. let's not confuse the two things please. What was added to the tagliolini was most certainly paprika.

    Wonderful, its a month or two before the ceps are ready to harvest 'round here. Its pretty magical heading to the woods & picking them, finding a perfectly formed "penny bun" is always great. In good years we get enough to dry a load to see us over the winter.
    Great seeing the grannies cooking up a storm like that. Reminds me of harvest time on the farm. Everyone working hard & the ones not getting the harvest in producing mountains of simple, tasty food to fuel the hard work. Though I love traditional British food I would have loved a Pasta Granny or two there to make heaps of pasta & beans.
    Poor chap not being able to eat that wholesome looking food. Still lovely to see he & his wife so much in love after all those years.
    Thanks for the video, you've made a summers day even brighter with it.

      keep your location secret otherwise your porcini plenty will disappear in no time! The harvest is similar here in Italy, though with mechanisation there aren't the huge numbers of workers to feed. Vincisgrassi - a lasagna made with the tomatoey stewing juices of all parts of the chicken (offal included) - was the traditional dish to serve hungry workers here in Le Marche. 😊🌺 best wishes, Vicky

    The delicious and nutritious food of La Cuccina Povera .. love the idea of a summer kitchen in the vineyard. It would be nice if you can ask the nonnas what would they like to say to their viewers from around the world in addition to what age they started making pasta. Several of the nonnas have something in common with the Obama family: those splattered dishes (the green bowl in which the chickpeas are soaking) if anyone cares to know !! And where can one find "un marito d'oro" like Mr. Nunzia ???? Cute couple. Love his smile. :)

    If I heard the video right, the tagliolini and chick peas (ceci) segment, you said zafferano, which is Italian for paprika. Zafferano is saffron in English and a more commonly used ingredient in Italian cooking. Please correct me if I’m wrong Vicky…I want to try both of these wonderful recipes and want to make sure I’m using the correct “zafferano “!

      Yes, zafferano is saffron, she probably did that mistake because there are red varieties too.

      You can find them in local markets. They were used for various purposes, for exemple my grandma used them to produce salami.

      If you all don't like "stinky cheese" and want this "alfredo" or tomato sauce there are a lot of italian-american channels on RUclips, this channel has italian recipes.
