  • Try making these cappelletti this weekend! Leondina's recipe is the following. I have halved the quantities, this will be enough for 5-6 people.
For the pasta: 400g 00 flour, 4 eggs
For the filling: 50g mortadalla, 450g pork loin, both minced, 250g Parmigiano grated, 1/2 teaspoon of ground black pepper and nutmeg
For the dressing: 200ml of single cream, 200g speck, cubed, 30g Parmigiano

All grannies, all women involved, filmed, are really, really great! The creativity, the patience, the hard work, the past, the history, the family, the blessing, the hope, the love, I can't stop watching this. Because I experienced it with my grannies. The best display ever! Thanks to all grannies! Forever. And thanks to the channel. Whenever I feel down a bit, I recall your channel. And then, I watch it regularly. It lifts me up. Always. Thanks. @@gyozakeynsianism My grandma is 90 and very active, intelligent, just the same as she was when she was younger. She is a painter and a potter so she putters around her studio for much of the day. She also has a little garden, still drives, takes care of her house, and goes to community events (ie. church, art shows, workshops). She really only cooks when someone is visiting, and usually makes something simple.

I made this just now. Fantastic. Absolutely delicious. Speck costs a fortune in the US now but you need only a little. If you use a machine to roll out the pasta very thin, these are easy to make if you break up the steps. I didn’t bother with the panna because I had only heavy cream but adding a touch more pasta water with bouillon thinned it out nicely, the starch helps it emulsify. I wish I’d made double!

The closest recipe we would have in Appalachia would be a dumplings filled with ground pork sausage. If you like a joke, when our hens were not laying eggs regularly, they would send my cousin & I to walk about 1/2 mile to a neighbor to get eggs( Grover & Hazel Wilson), as they sold eggs. We'd ask how much for a dozen eggs? He'd say 25 cents a dozen & 10 cents a dozen if slightly cracked. We'd say, then crack us up a dozen, lol. God bless you all & have a Blessed Good Friday & Easter

Brilliant! Would never think of mincing mortadalla to be a filling. Such a lovely lady, so full of vigor, living life to the fullest. I googled speck (Italian rather than German) and learned that it is smoked, which would really make the dressing unique. Loved every second of this! Thank you Vicky and team for another culinary adventure in Italy.

Mortadella is the main component of the filling in tortellini, both are from Bologna

What a lively, lovely, Nonna-chef she is. Beautiful name “Leondina” and her cappelletti are a masterpiece ♥️

    Grazie! Saluti dalla Finlandia!
Thank you for the recipe, now i know much better how to do pasta by hand. 🙋‍♀️ I also learned that in Italy you do cappelletti and tortellini, love you! 👒

That looks fantastic! All those fresh eggs make the pasta such a beautiful golden color. I would be like her grandson, very generous with the parmesan. And I’ll use that idea of putting the flavor cubes in the pasta water instead of salt - why didn’t I ever think of that? Grazie, Leondina!
