How to make nettle taglierini with porcini sauce | Pasta Grannies

- The addition of fresh marjoram makes Cicci’s taglierini (aka tagliolini) pasta extra special. The herb is a favourite in the kitchens of Liguria where Cicci lives. Her recipe is easily adaptable: if you can’t find nettles, use spinach or chard. And if fresh porcini mushrooms are too expensive, use ordinary mushrooms. Her recipe will be in Pasta Grannies next book to be published in September 2022.

You know what? These grandmas have cooked a whole life but they always do some kind of boring and not creative at all tomato sauce pasta.
As an Italian i downvote these videos, they don't represent the italian grandmas culinary knowledge, these videos are about them cooking not only them be wholesome and lovely (which they are, i mean this nonna is very cute).

I'm always in caught staring in such affectionate admiration. One would assume that the onset of things such as osteoporosis and arthritis would dull the vitality and vigour of these women but they are far stronger than any of us and seem almost allergic to slowing down. The athleticism of Cicci alone is a treasure.
Her liberal use of olive oil is enough to have this woman sainted!

Cooking with nettles is a great nutrition hack! Saved many people during the wars. Today, probably be careful where you harvest it, so its not contaminated with pollution, etc. Those porcini are worth their weight in gold. Whoa, what a treasure! Ciao Cicci!
So interesting to see it! It makes pasta much more healthy. Here in Brazil we eat lots of rice and we like to mix it with broccoli and carrots, in a similar fashion
I agree, nettles are great and nutrious. My mom used to make a very tasty nettle soup (a bit like a spinach soup). But today, I find it hard to find nettles in "safe" places (where there are not many dogs pissing on them, and you also have to be careful of "foxwurm").
@@swissfoodie3542 if you boil the nettles fox worm isn't an issue. But be careful though freezing won't do anything only heat can kill them.
Wow, Cicci is like a force of nature. She reminds me of the older ladies in the village where I grew up. You could tell they'd worked hard all their lives but they still seemed so strong & unstoppable.
She seems so humble about the huge tasty feast she prepared for you too; [enough to feed an army], it looked fantastic.
I'm almost out of my dried mushrooms that I dried last year. I'm eeking them out 'till I can gather more.
Do love using foraged stuff in my cooking, nettles are so good, great taste & really good for you too. One of the great things the "Romans did for us" [sorry Monty Python] was introducing them to the UK.

This is the best. I love how efficient her technique is -- covering with a bowl instead of wasting plastic, not losing a bunch of ingredients just to hurry for the camera. I think it has something to do with living in those hills -- hiking them is no joke!

Whenever I look at the grannies I can well imagine how they carry a 1 ton stone and they don't care. They have so much strength for another equally long life. It is such a joy to watch them make pasta. Thank you for having this channel. Thank you to all the staff!

O Cicci, there was clearly no reason to be nervous at all.
I need to try this! I scavenged cheap eggs today, I have pasta flour that's only getting older and every time I go past an overgrown patch with fresh nettles (rare for the island, as there's so little shelter they barely grow anywhere but roadside ditches) I keep wanting to snaffle some, but know I'd probably waste half without a definite plan...I hope you told Cici she did a great job and that the internet people appreciate her a lot.

My parents are born 1943 and 1947. They both know nettle soup getting as children. It was food and grew everywhere for free.

Watching this episode it brought back memories of my childhood in northern Italy. Cicci is a very determined and strong Nonna, just like mine was, and I rarely misbehaved when in her presence☺️

what a treasure to own even the smallest piece of land! it doesnt even need to be cultivated, and it will still give you something useful. and to think that some people only grow grass on their lawns... they are missing out on so much abundance!

Other ideas: risotto, frittata, and ravioli filling. No end to the great dishes you can make out of nettles. And so nutritious!

What a lovely lady. Obviously very hard working and, I suspect, suffering from arthritis or some other chronic pain judging by her guarded movement (and your comment about her shoulder). There's something quite touching about how she was nervous about being filmed and so concerned that the meal would be delicious. Modesty is a great quality in a person. In Australia we have an expression "the quiet achiever". Someone who just gets on with the job without seeking praise. I would guess that Cicci is a quiet achiever. Good on you, Cicci.

Just wonderful! The last time I was in Italy, it was porcini season and I had them as often as I could - of course we can't get fresh ones in the States. Everything was delicious but I'm sure this lady's cooking would be even better. ❤️

Every time I use my Imperia to make taglierini they come out too thin, I see she only passes the pasta up to 3. What a great recipe, that parsley in the sofrito surely is a good trick I should try.
