Cinnamon Roll Dough:
Tangzhong:
150 milliliters of water
30 grams of all-purpose flour
165 milliliters of cold buttermilk
450 grams of all-purpose flour
50 grams of granulated sugar
Two teaspoons of kosher salt
One packet or two and a quarter teaspoons of instant yeast
Two eggs
70 grams of unsalted room temperature butter
Filling:
60 grams of unsalted butter, room temperature
Spice Mixture:
80 grams of granulated sugar
50 grams of light brown sugar
One and a half tablespoons of ground cinnamon
Cream Cheese Frosting:
200 grams of powdered sugar
80 grams or three quarters of a stick of butter, room temperature
115 grams or half a block of cream cheese, room temperature
Half teaspoon of kosher salt
One to two tablespoons of heavy cream

50g light brown sugar
80g granulated sugar
15tbsp ground cinnamon
1tsp ground ginger
1/2tsp ground cardamom
1/4tsp ground all spice
1/4tsp salt
1/8tsp ground clove
1/2tsp grated nutmeg
250g pumpkin puree
Brush with melted butter
For frosting
1tsp instant coffee powder
2tbsp heavy cream

I'm not a baker. I just made these and they are the prettiest thing I've ever made. It should be noted that I needed a ton of flour to get it to make a dough from a batter

I needed to as well, felt like another cup or more by the end. I'm sure I over worked the dough just trying to get the hydration % down.
I love the proof setting of my oven. It's made all my yeasted baking so much more consistent.

A very loud no! From a home baker of many years. Never use those settings. Especially nowadays with computer controlled ovens, they are super inconsistent. just use a draft-free place on your countertop, cover the bowl loosely with greased plastic wrap, and cover that with a warm, damp towel. Thank me later.

Pro tip for cutting the rolls: use unflavored dental floss. It won't crush the roll as you're cutting it and will stay rounder and keep the layers more uniform.

Actually! There's quite a few cinnamon roll recipes that include the pumpkin in the _dough_ of the cinnamon rolls to make them pumpkin spiced! It actually makes the bread so tender and keeps it moist for much longer than any without, I highly recommend!

Pumpkin *Spice* has no pumpkin. It's the spices used to make pumpkin pie and bars -- just without the actual squash.
@@theforkedman3030 I'm going to help you out bc this is the kind of thing I got stuck on when I was younger. "I'd love to see him do" is generally read as implying that this would be something in the future, ie not the current video "actual pumpkin recipes" is read as implying that this recipe doesn't count. Most people will read the two potential negative undercurrents because the plural doesn't necessarily negate them if people even notice and isn't a strong positive in comparison. Also youtube comments are very often negative so there's additional conditioning to read the negative implications. A way to say this that would be more likely to be read positively would be "I'd love to see him do _more_ actual pumpkin recipes."
idk, I'm autistic so I don't understand it on an intuitive level, but that's how people read stuff. Also the other response, ryanjcole, is correct, pumpkin spice refers to the spice they use for pumpkin, not actual pumpkins and spice. You can buy bottles of the stuff. It's a bit like "poultry seasoning" but sweet instead of savory.

oooooo apple butter! I would spread with apple butter like the nutella or pumpkin, sprinkle with brown sugar (alone, no spices as they are already in the apple butter). Also...pumpkin butter!
@@lisawallace3124 The trouble I’ve ran into is either sogging the rolls out with too much apple butter, or it just disappearing with too little.
I just love this channel because you show advanced techniques (but not crazy ingredients) in a simple, step-by-step way that’s easy to follow.
When I was a kid we used to call these American Pinwheels and stuck cinnamon in the dough and raisins in the layer. Ate them with custard. One of the first things I ever cooked so it brings back great memories.

The very first time I made cinnamon rolls, I had mixed cinnamon with brown sugar and nutella. This was by mistake, but a VERY delicious mistake. 🤤

@@lillysmith4040 I had some leftover cinnamon streusel that I used to top my banana bread. When I was making the rolls I forgot that it wasn't just brown sugar but also had cinnamon added to it. I had mixed Nutella with the sugar hoping to balance the sweetness because I wasn't going to put any topping on it. It was only after I tasted it that I realised what I had done. But because it was yummy, I didn't care. Lol! 😆 Even though I did this by mistake, I will recommend you do it purposely, because it paired so beautifully with a cup of strong coffee. Now I'm craving it. 😍

These look so delicious! When I make cinnamon rolls I find it using dental floss or a piece of string work great at creating clean cut rolls whilst still allowing them to hold their shape. Also premixing the butter, cinnamon & sugar mixture before, allows for a more even layer of flavouring🥰💕 Definitely will have to try the Nutella one!!
If you feel that cutting with a knife makes a mess or flattens your rolls: slide a thin wire (sewing yarn works well) under the roll of dough, cross the two sides over the roll, and pull (bottom string goes up, top string comes towards you)

These look fabulous! I recently made pumpkin cinnamon rolls with pumpkin in the actual dough and those turned out great too! I made a maple cream cheese icing for those. Going to have to try your pumpkin spice latte version!!

Hey, finally something pumpkin spice flavored that contains pumpkin! Those look delicious, though way too sweet for me😋
Personally, i have tried "regular" dough, the way you did it and I tried vanilla pudding with butter as the wet part of my dough. The latter option stays moist for such a long time and the slight vanilla flavor works very well with the whole thing and one can simply replace it with chocolate or caramel pudding for a nice change in flavor.

Yeah just make sure it's not mint flavored floss, cause that'd taste really weird...
I love how beautifully sharp your knife is to cut those rolls so easily, but I think for a basics video, most of the audience doesn't have knives that beautifully sharp and maintained. Without a nice sharp knife, you're gonna crush and mash and smush your carefully made rolls. A great solution for that, is to cut it from all sides by tightening a loop of dental floss around your roll.

I always add heavy cream to the bottom of the pan before putting the rolls in, so when it bakes they become lightly caramelized and ooey-gooey

I made the pumpkin spice latte cinnamon rolls and my friends really liked it! The frosting was my favorite part, and I want to find more ways to use it. Making this was easy, but long. I am so happy that everything rose like it was meant to. Normally, I have issues with this step.

Because cinnamon and apple is a classic flavor combination in many different dishes and desserts.
Spiced, chopped apples in with the cinnamon brown sugar mixxture. Maybe use dried apples if you don't want too much liquid in the filling, and stick with a cream cheese cinnamon icing?

Hey Babish, i have a challenge for you. Its a simple, but delicious austrian meal, perfect for the colder months. Its called "Blunzngröstl" - Blood sausage and fried potatoes with onions and herbs. Typically served with sauerkraut or austrian warm cabbage salad (warmer Krautsalat)
Though some people may have reservations about eating this type of sausage, i think its hearty and delicious. Reminds me of my grandmother, she loved this dish

Before baking, try pouring a bit of heavy cream onto the rolls, allowing it to seep into the cinnamon sugar spiral. This guarantees a gooey center, even when they're cooled.
