  • This is an absolute delicacy for me around the thanksgiving and Christmas holidays
Very simple and easy to make ,flavorful tender and moist
    Recipe:
    6-8 turkey tails
2 tablespoons chicken or poultry seasoning of you choice
    salt and pepper
    2 tbsp. Cavender's Greek seasonings
    2 cups self rising flour
    1 cup buttermilk
    1 qt vegetable oil
    2 quarts water
wash and clean thoroughly turkey tails
be sure to remove all feathers that's sometimes still on them
add water ,seasonings and turkey tails to pot
    let simmer for 45-60 minutes
remove turkey tails from pot and save liquid for gravy later( liquid makes good gravy actually)
let tails cool for about 20 minutes
    add buttermilk to tails
remove and coat in flour(dust off all excess flour)
fry in vegetable oil on medium high heat until golden brown on each side(2-3 minutes)
Enjoy with hot sauce and ketchup(my choice)

I’m Samoan and turkey tails is part of our diet. NZ, USA, Australia export meat that they don’t sell to remote islands like Samoa in the South Pacific and became part of our diet because it’s cheap. We marinade them in teriyaki sauce and bbq them or chop them up in small pieces for stir fry. Try it!👍🏽

Nice recipe I may have to try the next time I see turkey tails...
My family's tradition way to cook them was to slow roast them. Put them meat side up in a Pyrex pan in a oven at 275 degrees for 3 hours. Then drain the fat (SAVE IT FOR COOKING), put down a whole 1/8" slice of brown onion under each tail fat side up, and roast for another two hours until they are crisp and brown on the outside. You can serve those roasted caramelized onions on a slice of toast....or save them for another recipe. (...and pour of the rest of that turkey grease, which is as good as bacon grease or duck fat!)

I just found this by accident I love chicken tails it’s my favorite part of the chicken in my house they call it the popes nose… Everybody used to make fun of me but I didn’t care! Because I knew that it was the best part of the chicken and since nobody else liked it it was in my favor! I’ve never seen a package of turkey tails but I’m sure going to keep my eyes peeled for them this is such a revelation for me. If I ever do find them this is how I’ll be cooking them oh boy they look so great and it’s so great to see somebody else that likes them as much as I do. Big huge gigantic love Liza xoxoxo

I have a pair of needle nose pliers just for my kitchen for cleaning my chicken and turkey or anything else. FYI. Be blessed.

I always had the smoked turkey tails. These look good. Another one of your recipes that I’m going to make. Thank you Chef Jeffery.
