- OLD SCHOOL GIBLET GRAVY
This is a very simple and flavorful GRAVY that goes great with cornbread dressing
FRESH HERBS AND FRESH HOMEMADE STOCK is very very important to an awesome giblet gravy
Recipe
1# turkey giblets(chicken will work also)
1 1/2 cups chopped onions
1 1/2 cups chopped celery
2 tablespoons chopped parsley
2 tablespoons chopped thyme
2 tablespoons chopped rosemary
2 tablespoons chopped sage
3 boiled eggs chopped
2 quart OLD SCHOOL TURKEY stock
Salt and pepper to taste
Simmer in a pot the giblets onions and celery until giblets are tender tender ( about 1.5-2 hours) remove giblets and finely chop up
Add herbs to stock pot and simmer 30 minutes
Thicken with roux and season with salt and pepper
Add chopped parsley and eggs and simmer another 5 minutes
ENJOY!!!

Geez Chef Jeffery, I've not had old traditional gravy like since the 70s! My grand dad made a gravy like that for his famous chicken and flat dumplings. To this day when I do chicken and dumplings, I've got to add some hard boiled eggs and giblets in the pot. I'm late catching up, so I see the dressing video is ready...next up!

Thank you for making this video. This is exactly how my mother used to make it (with dry seasoning though). In the past, I couldn't find any video close to how my mom made it. This brought back some memories of the full recipe. My mom also made your same dressing as well, I think chicken liver was added too.

Thanksgiving is probably the only time I make gravy. I always really season up my turkey while it's cooking so I have fantastic drippings. Then add my other basics. I've been doing this for probably over 25years and my family loves to stand around the huge skillet I use waiting for it to be done. They start "testing" it before we even start the meal! The running joke is, " oh that's really awful so you don't want any" just so they can get more than their fair share. Lol

Best gravy you will ever put in your mouth is giblet gravy and this looks absolutely amazing. This is the very best old school giblet gravy that I have ever seen shown. When you see a giblet gravy like this on someone's table you know that person can reeeeaaallly cook!!!

Do you put boiled eggs in you dressing? We do boiled eggs in the chicken cornbread dressing, giblet gravy, and I make my 2 sons (and my baby brothers) favorite deviled eggs 🥚.... the boys LOVE boiled eggs in my family

You took giblet gravy to the next level!! If a gourmet restaurant served giblet gravy, this is how it would be made. Fresh herbs (not dried from a plastic container and fresh onions not granulated onion nor onion powder), I know this is some delicious gravy. Man, I would sneak and eat some of that gravy as soup!! What is the ratio of salt to white pepper in your container?

What a wonderful recipe and your instructions are easy to follow and just right. Well, except for my mama used to add a little liver also but that's the thing about giblet gravy. Oh, this takes me back. My mother was from Arkansas (near Memphis) and she would make this. With seven kids and two adults not much would be left over. We would get up early and heat up the gravy and some dressing and eat it for breakfast, otherwise, we wouldn’t get anymore.
