Hi dear. Well, you can do without butter actually, then it will be purely a custard pastry cream base instead of butter base. The only concern is how stable can the cake hold. Maybe you may add 1 or 2 more tbsp of cornstarch to thicken the pastry cream further. After assembling the cake, chill the cake at least overnight instead. Hope this helps 😊
I was about to say I have everything to make this except for the strawberries (that I almost bought on Monday 😔) until you used a pan and the plastic sheets that I don't have ☹. Not sure if this happened but did your pastry cream scramble? Even after you put it thru a sieve I could still see lumps. If it did do you think it had anything to do with the use of flour? I've made pastry cream many times but never with flour. It's a lovely cake. Just sad it's one I won't be able to make...
Hi Tammie. You can also use a round loose base pan or a ring. You don't have to use a square pan. If your pour that hot milk gradually, the pastry cream will not be scrambled. Yes, it can be a little lumpy, staining it can prevent lumps. Add the pastry cream into the butter in 2 batches, mix on high speed just to combine but don't over mix, then add the 2nd batch. Adding the flour is ideal to hold the cake and stable, else the cake will be a little wobbly. Hope you can give it a try, I assure you it won't be a regret 💖☺️

I think my 9in springform pan will be deep enough so should I 1.5x the recipe to make enough batter? If not how many times do you think I should?
