- Eggless Strawberry Fraisier Cake - I believe it’s strawberry season as I see lots of strawberries at the store. I can’t resist making a strawberry cake as I do not wish to miss the fresh and beautiful strawberries. This is a very light and refreshing cake. The eggless vanilla sheet cake is so soft and light. The pastry cream is so delicious, I love how the flavour that goes so well with the strawberries. The pastry buttercream is super light, I would say much better than pure buttercream, best to serve right after your meal. Hope you’re inspired and give it a try. Enjoy!

Ingredients:
• Eggless Vanilla Cake Sheet
I used 26x36cm pan
6 inch ring (for assembling)
180ml [¾ cup] milk
1 tbsp white vinegar
180g [1½ cup] cake flour
1 tsp baking powder
¼ tsp baking soda
120g [½ cup] plain yogurt
100g [½ cup] fine sugar
85g [¼ cup + 2 tbsp] oil
¼ tsp salt
1 tsp vanilla extract
• Pastry Cream
150g [¾ cup] sugar
450g [1¾ cup + 2 tbsp] whole milk
38g [2½ tbsp] plain flour
20g [3 tbsp] cornstarch
1 tsp vanilla extract
170g [¾ cup] unsalted butter
• Toppings
100g [¼ cup + 2 tbsp] whipping cream
10 whole strawberries
14+7 strawberry halves
syrup
[1 tbsp sugar + 2 tbsp hot water]
25g [¼ cup] strawberry jam
Piping tip: 869
Instructions:
• Eggless Vanilla Cake Sheet
10. In a glass, mix milk and vinegar. Mix well and let it rest for 5 minutes.
11. Sift the flour, baking powder and baking soda. Set aside.
12. In a small bowl, add condensed and turmeric powder. Mix until well combined. Set aside.
13. In a large mixing bowl, add yogurt, sugar, oil, salt, vanilla extract and turmeric mixture. Mix for 1 minute until well combined.
14. Add in the milk mixture in a few batches, alternate with the sifted dry ingredients. Mix to combine.
15. Add in the sifted dry ingredients in a few batches, alternate with the milk mixture. Mix until combined.
16. Transfer the batter onto a 26x36cm pan. Try not to use a smaller pan. Use a scrapper to spread the batter evenly. Tap the pan on the table to release air bubbles.
17. Bake them in preheated oven at 180°C/355°F for 15 min or until the inserted skewer comes out clean.
18. While the baking is going on, prepare the cream frosting as you’ll need to standby using it later.
• Pastry Cream
1. In a milk pot, add the milk and sugar. Cook over a medium low heat.
2. Add in the flour and cornstarch. Constantly stir and cook until the source is thickened. Remove from the heat. Add in the vanilla extract, mix until combined.
3. Strain the mixture. Cover with a cling film directly on top of the cream to prevent formation of skin.
4. Set aside until it is completely cool before using.
*Remark: you can also put the bowl over another bowl of ice cubes to bring down the temperature fast.
5. In a large mixing bowl, cream the butter until creamy and pale.
6. Add in the cooled pastry cream in 2 batches. Mix until combined. Use a spatula to scrape the bowl to ensure even mixing.

1. I used 6 inch ring to assemble the cake.

Nice recipe. Did you mix mixture of sugar, oil and yogurt until sugar dissolved completely or just mixed until they are well combined? When I prepared I still see tiny sugar granules after mixing.
Hi dear. Mix just until they are combined, maybe around a minute will do. Don't worry about the sugar as they won't dissolved in the batter completely. Hope I answered you. Happy baking !

I cannot fit a 26" baking pan in my oven. Please let know if I can bake them as 2 separate 6" cakes...if yes! Please let know if any changes to the baking temperature and duration. 🙏🏽

Do you add a stabilizer to whipping cream frosting? I made frosting with just sugar, whipping cream and it becomes runny in a few mins. How should one make sure the cake is still ok if it needs to sit outside for a few hours
No stabilizer added. You need to get the right cream. It says 35% fat on the packing. It's very stable and stay in room temp for hours
Hello Fiona, please let know if oil can be substituted with melted butter. 🙏🏽
If you wish to add butter because of taste, you can replace partially, maybe 30% of the oil amount, 70% still remain with oil. Replace full with butter will result in dense cake. Hope this helps

What size pan did you use for the assembly of the cake?
I forgot to mention, sorry about that. It's 6 inch ring to assemble the cake. You can also use 7inch if you have, no problem

Is there a substitute for cake flour?
All purpose flour or plain flour is probably they best, though you won’t get exactly the same texture it’s what I use since I can’t find cake flour where I live. But if u want to get really technical u could combine cornstarch and all purpose flour together to get the correct texture

@@ushah04 You can make your own. I have access to it yet many don't but from what I've read making it yourself isn't only easy but it works just the same. Google a recipe by Sally's Baking Addiction. I use her recipes often. Haven't had a fail yet. Hope this was helpful. Good luck and happy baking... 😊
