Oooh, 3 of my favorites. 😋 You make your lemon curd much different than I make mine. I use 2 whole eggs and 1 egg yolk. I also don't use flour or cornstarch in it. A lot of homemade lemon curd recipes have a heavy eggy flavor to them (that's why I use the ratio above vs the 4 that the recipe I follow calls for). Does your curd taste eggy? I enjoyed watching you make SMBC using a handheld mixer. You just don't see many people doing it that way. How much SMBC would you say your recipe makes? Have you ever made a coconut and pineapple SMBC before? I have a recipe that I think you'd love to use on one of your cotton sponge cakes. It's lick from the bowl delicious, 😄
Hi Tammie. Not at all, there is no eggy smell in my lemon curd. It's full of lemon taste, sweet and a little sour. If you like more sweetness, you can go for 200g sugar, but I reduce to 150g just so that it will retain some lemon sourness. Smbc I normally use my KitchenAid stand mixer, but since I'm not making a big volume, handmixer comes in handy. I like the fact the smbc balanced well with the lemon curd. Pineapple or coconut smbc will be good for my pins colada cake previously made actually. Smbc is so delicious, but need some patience as it can be a lot more work than just a regular light whipping cream. Hope you'll give the lemon curd a try. If you're just making as a bread spread, reduce on the amount of flour so that the curd will not be too thick. Since I'm using it for cake filling, I made it slightly thicker, that's all. I made the same cake twice. Once using Maraschino cherries in the jar which was far too sweet. The 2nd time I made a cherry filling using real cherries. Now that was a delightful cake. 😋 I never thought to make a small batch of SMBC using a hand held mixer. Makes more sense really. Thanks for the tip. Yes, it is more work than a regular whipped cream frosting but I'm willing to go through it because it's so good, lol. I'm in the U.S. Sourthern California to be more precise. Hi dear. You may replace with cane sugar. They are usually very light brown in colour and it also taste amazing. And of course it's a healthy sugar and it is a premium sugar on the shelves

Hi dear. Do you use upper and lower heat mode for your oven? If you are baking this sponge cake, the colour will usually be very even and evenly cooked too. Maybe I will suggest that you place your cake on the lower rack, so that the upper part of your cake will not be too close to the heat. It will be the same for any tin size

I've just tried it, it tastes amazing but the cake deflated when I took it out of the oven, it shrunk and sunk in the middle idk why...... I measured all the ingredients and tried not to overmix the batter but it didn't turn out well, any help??

Yes I do. But make sure it is well baked. Usually after taking out from oven, it will shrink slightly, is normal
