Thank you!! Oh, definitely you can use it with watercolors. As long as the liquid you're using is thin and opaque, you're good to go!

Can you use other nibs besides because rose nib

Sure! It's definitely worth experimenting with -- flexible nibs that can make a fairly thick upstroke will work best. :)
