The 9inch blade is quiet long but it's a strong and sharp knife. My husband used this fillet knife to cut up venison and it worked well!

The 5000 is not SW rated. If used in SW please clean regularly for best performance.

Few things for newbies, blind slicing would get me fired on the charter boat. Lift the meat as you clear the fillet. You can see meat still on the carcass.
Don't cut so deep into the belly. Move 1 finger over from stomach pocket. Worms, and gut fluids, tanited meat avoided then.
On the first cut, presenter cut against the grain, otherside, cut was with the grain. That combined with blind cutting, gonna lead newbies to leave ozs of meat still on the fish.
When you have clients standing over you, at 35$ a lb, every oz counts.
Decent video, however would not fly on professional boats out here.
Does halibut taste like Fluke/Flounder
Halibut is considered the very best white fish caught in saltwater. It is my favorite of any fish, anywhere. They are large and the steaks can be cooked in many ways but all are very good. Much firmer and cleaner than fluke or flounder. A halibut looks a little like a giant flounder and they can grow to over 300 lbs. We will be fishing for halibut in Alaska in a few weeks, stay tuned and make sure you have subscribed KastKing😁

I use to work at a seafood restaurant for 8+ years and I find your method very slow , we use to cut off the tail and cut off the head behind the gill and make straight cuts down and following the spin of the fish ,we would also , skin all four sides and cut into fish n chip size pieces for battering , boil the tails and heads for fish base broth for bouillabaisse stew

Good cut but he misses out on the most important and nicest parts. But ofcourse being non European he doesnt know about cooking, best parts or a bouillabaisse. But, his cutting is ok.

I didn't realize Europeans caught a lot of pacific halibut...
never put the skin side of the fillet against the meat side of another fillet....cardinal rule #1...remove the skin as well
You missed the cheek the oyster 🦪 of the halibut and you still left loads of meat on there ?
