My son brought home a small halibut today from his first time pier fishing. I don't eat fish and have only cleaned one bluegill 40 or so years ago so I really needed these easy-to-follow instructions. I used a sharp carving knife and ended up with 4 tiny fillets. Thanks for the tips. p.s. Didnt know those damn things have teeth. I about lost a finger. 😅

The best thing about this video is that you used a Dexter Russel knife, your technique is flawed from the start, you can see the lateral line on both sides of a Halibut, the inside out method causes the first loin to be interfered with by the 2nd loin when you do either side.
Ugh. You ruined that fish by cutting into the gut cavity. Any depiction of fileting halibut should clearly explain you don't want to cut into the gut cavity and how to identify the two filets that are attached to the gut cavity. When you cut into the guts you may expose the meat to gut juices that ruin the meat. Its really the primary thing newbies need to learn when fileting halibut and not only did you fail to address it, but you showed exactly how to do it wrong (cut into the guts).
