I make Wellingtons all the time using all kinds of meats -- it's a great way to cook a pork loin or mixed cuts of lamb that have been minced and formed into a loaf using an egg to make it hold together. Jamie's tip about seasoning the board and rolling the meat is simple and brilliant! I also like his really thick layer of mushrooms and livers. I previously used a food processor to make a paste, but I really like the look of his rough-chopped mixture -- the individual flavors would be much more pronounced.

He dried out the mushrooms by cooking them for 15 minutes and then adding the breadcrumbs to absorb the moisture. Agree with you on the ham and mustard though

I'm a Gordon fan, but I gotta say, this one was a soft, slow and ACTUALLY INFORMATIVE video, Gordon Ramsay is all out zooming in and trying to make it look all good and fast paced.
