That’s brilliant really beautiful! Fun fact, my wife’s best friend used to clean Julia Child!s house in Cambridge. I guess she always making treats of sone kind for her kids.
Thank you so much Darren for your warm company, sweet stories and dreamlike recipes. My two year old adores you and Winston, to the point she named her pull along dog toy after him. "Eating Royally" kept me so much company in a gloomy period of my life and now, years later, we LOVE watching your videos together. It's our cherished tradition when her dad travels for work every week, lots of fun for us both! Thank you so much for being such a lovable presence in our life :) Cheers from Italy
Love your videos. Am thinking of buying a mug. Especially as she is no longer with us, hearing about what the Queen loved to eat brings me so much joy. Take care
Do it you won't be sorry. I had never done one, just watched a couple of you tube videos then went ahead and it turned out great. I seasoned with salt & pepper only then seared (do the ends too) then applied english mustard to the outside as soon as it finished searing. I also wrapped in prosciutto, didn't bother with the crepes. Onion and garlic with the mushrooms is best (some do mushrooms only) and can throw in parsley as well. There's lots of variations out there.
Beef tenderloin is quite expensive. If you want to make this on a cheaper budget and have something for a family dinner or the like, go with a Pork tenderloin. MUCH cheaper (though smaller). I suggest going for an apple based layer instead of mushrooms but aside from that the principle is exactly the same and turns out amazing.
You are very skilled and from what I see a very hard worker. Beef Wellington looks great. I bet the Queen will appreciate that you saved her an end piece that was well done. John T.
I made beef Wellington for a number of years for Christmas dinner; Tyler Florence's recipe. He used the prosciutto as well, with a green peppercorn cream sauce. I finally realized that the crust, and duxelles, and prosciutto were all just too much. If I ever make a fancy dinner with beef tenderloin again, I'm just going to roast the beast, and serve it with a hollandaise or peppercorn sauce.. simpler and let the beef shine. Thanks so much for your wonderful recipes!!
For my high school graduation in 1975 (yikes!) my wonderful sister took me to the fanciest restaurant in town, the Copperbeach Inn, where I was first exposed to Beef Wellington. I have rarely found it available since then, and none lived up to the memory. Since then I learned to cook fairly well. Or, perhaps, better. Still, Beef Wellington has remained out of reach. Until now! This is the uncomplicated but gorgeous version that I'll be attempting myself. I can't wait! Thank you, chef Darren. Be well.
Looks delicious chef! I made Gordon’s recipe last year for my family on my birthday/Valentines Day. Certainly not the cheapest of meals, but the taste and wow factor make it well worth it
It's mooing is what a few of my family members would say and like the Queen want an end piece as well but the rest would want it cooked to perfection as you have done. What a beautiful Beef Wellington and great how to instruction video.
I have never made Beef Wellington but it is a dish to die for. I have only found it in two restaurants. They were both in Florida. The first was in Boca Raton in the 1970's, long gone. The other is currently open in St Augustine. They both served the dish as individual servings, the beef being wrapped completely as it was served. Heavenly.
I've never eaten Beef Wellington. Since you mentioned Julia Child I have a couple of anecdotes. She was in the OSS during WW2. She went to Ceylon(Sri Lanka) and Burma(Myanmar). I read a story once that a woman was having a dinner party and called her up to ask her for advice. Even though she didn't know her Julia Child helped her plan it. Then called back the day after the party to find out how it went. Class act. How many of today's "celebrity chefs" would do the same? I think several probably would but unfortnately some wouldn't even give you the time of day.
Hello Darren, I think I finally have caught up on all or most all of you previous videos. I love watching and listening to you. You have the most pleasant voice. This beef wellington looks so delicious, but I would have to omit the mushrooms, just not a fan, but would love to make it for a special occasion. Hope your enjoying the good Texas weather. I miss it, as I'm back living in the Midwest.
@Petronella haha thank you. Got it many years ago when i could not find a username avaiable that i wanted. I got annoyed and used this. Now i can't get rid of it. It's tied to everything online.
Love this recipe. I always use my remote digital thermometer. I can set it and forget it until it signals the internal temperature that I want. Can't cook without it.
Chef, I’ve now met you twice while in Italy. I saw you with your daughter. We were waiting the same flight to Bologna, from London. And I met you today inside the Mercato Albinelli in Modena. Both times too shy to say hello! Well, if I ever get another chance I’ll have to make sure to say hi! I hope you are enjoying Italy
Hi Cristina. Thank you for reaching out. I wish you had come over and said hello! Next time ! 😀 I loved the Mercato Albinelli today, hope you enjoyed it too
My husband and I recently had Beef Wellington at Wilton’s, one of our favorite restaurants in London. I think I will try to make your version. My mouth was watering 😍
The Queen always felt a bit like an extra grandmother to me and the nation, hearing she liked well done beef and hated garlic makes her feel even more like my gran.
Her Majesty didn't refrain from garlic because she didn't like it. She worried about how her body would smell the next day as she performed her duties.
I was a chef for 10 years and made 1000s of Wellys. Try wrapping it in plastic, then twist the ends of the plastic until it makes a very tight “sausage”. Wrap it as tight as possible, the put it in the fridge for 30-60 minutes. You’ll get a nice tight Wellington doing this.
The best dish I ever learned to make. It’s the recipe I bring out for a dinner party or holiday meal. I learned to make it from watching The F Word (Gordon Ramsay) so I use Parma ham instead of crepes. Also, I’m terrible at making crepes so the ham is full proof. I like the way you make the mushrooms and will have to give that a go next time I make this.
If you look them up, Wellington boots in the US are often black. leather, and stand about ten inches. The tops used to have slightly higher fronts and and backs. They have changed appearance over the years and what are labeled Wellingtons now often look a lot like "roper" boots. The rubber boots that the English call Wellies are just rain boots.
Darren LOVE your videos!! Can't wait til you have more cookbooks available... :) Also, would you be interested in showing us your version of a Swedish Meatball recipe perhaps?? God Bless from Boston
Well.....lol... this is the 2nd time ive watched your video here. Cant wait to make this. And can we hear from you more often? Fairly new to your channel but Ive binge watched all your stuff, some videos more than once. Love your bent, what Winston's antics, learning about cooking, and hearing palace stories that Im sure are so precious to you. Thank you Mr. McGrady
Darren, you are a gem!!! I can’t wait to try making this!! Questions: 1. In the process of learning how to make this, would something like a London Broil be a good cheaper tenderloin alternative alongside pork? 2: Completely unrelated. How did you end up settling down in Dallas?
I've made it a few times with the pancakes and a few times with the Italian ham and the mustard, have to say I prefer it with the ham and mustard. I also mix the varieties of mushroom which adds to the flavour 👌
I have a question... Did you ever made one without mushrooms? I really wanna try making a beef wellington cause i never had it before and it looks delicious... except the mushrooms 😅, i get some sort of allergic reaction after eating them, so i cant and wont.
This is far better than the beef between Will & Harry.
So true lol😂 love them both but…..
I agree. I feel like their issues are getting out of hand. But yet again there are facts that we don't know.
😂😂😂😂😂😂
A+ for the pun 👏
😂
That is indeed a thing of beauty
This is one gorgeous guy...so deceptively smart..he knows wat hes doing but acts so unassuming...❤
Protect this man at all costs! Darren, you're amazing!
Don't protect this man.
He won't protect himself heart attack soon
Yep. Protection required.
SIR- the subtle music in the background is tasteful, perfect
It's so funny to me that the Queen liked her food the same way my mother did. Overcooked. Bless them both.
Dear Mr Darren McGrady i love your channel, it is so interesting. I can make only compliments. You are amazing.
Bloody marvellous. I’m rather peckish myself now
Appreciate the transparency with the British Royal cuisine, unlike certain Eastern cultures where Royal dishes are shrouded in mystery
That's because eastern royals are grass fed lol
Absolutely amazing, British food at is best!
That’s brilliant really beautiful! Fun fact, my wife’s best friend used to clean Julia Child!s house in Cambridge. I guess she always making treats of sone kind for her kids.
That’s the sign of a bad chef lol funny man Mr mcgrady well done with the honesty and humor !

Beef Wellington is my favourite food.
My mouth is watering.
I made it once & the recipe I had also had me spread the beef with pate
WOW BRAVO... Hats off to you. Your channel just popped up for me. I'm giving a thumbs up and a new subscriber. A YE HAW FROM TEXAS !!!
Beautiful, Beautiful Food Chef
Nice to see you eating what you cook this time, you deserve to enjoy such perfectly cooked food.

That was such a beautiful piece of meat, I actually teared up a little. Gordon Ramsey has never made me cry.
He's made a lot of other people cry, however.
Weirdo
*Ramsay - spell his name right at least
As good a Welly as you'll see anywhere, great work Chef!

I love how you keep it simple. Beautiful beef wellington.
you made that assembly look effortless .. excellent.
Thank you! Was always wondering how this was made. I love this dish. Love your sense of humor too throughout. I used to live in London. Miss it.
We
Love beef Wellington. We’ve only ever had it with pate around it. Will have to try the mushroom .
This is just an incredible display of British cooking. Can't wait to try! Cheers Darren!
The French definitely created this, the British only tweaked it. So, he's good at French cooking, not British.
I used the excess pastry to cut little leaves to adorn the top. All the carving was done at the table after the leaves were admired!
Great video! It’s an intimidating dish, but I’m tempted to try making it.
I want some now!!! Looks amazing.

She also kept their phone number listed in the books! Every Thanksgiving, she'd get call after call asking for advice, and she'd give it!
I didn't realize that Queen allowed garlic in her dishes. This looks wonderful!
Chef, I love all of your videos. Thank you.
lol 😂
I’ve made this, it didn’t look nearly that good. You make it look super easy. Great job chef!

This is the only Royal Beef I want to watch
This man is an example of a life well lived
I just ordered a beef tenderloin from my butcher. I'm having this tomorrow. Greetings from Denmark.

I made your sausage rolls the other night they turned out perfect thanks for the recipe Darren!!! 😃

Grandmother stealing your taxes and selling you to the globalists. We the sheeple
I was surprised by the garlic in the buckingham seasoning and the duxelle because of the Queen's well known dislike for garlic
Beef Wellington is the absolute King!!! It doesn't get better then that. Period!!!!
If you can serve a perfectly medium rare beef wellington with a crispy shell you are king for a day. My favorite.
Yes! The recipe I’ve been waiting for.
Lovely~!!!
you are the best Chef at all
I made it last Sunday and... Oh ! What a delight! Thank you!
Hi how are you doing today?
Darren you made it look so easy!
Your beef wellington looks absolutely delicious! Yeah, I’ve never made it before, but I honestly don’t think I could wrap it tight enough.

If you use the plastic technique it's a lot easier. But it's a learning dish, you don't get it perfect on the first try and that's ok
