I have never in my life had the pleasure of dining on a plate of genuine British Fish and Chips such as the ones that you have prepared in your kitchen. It looks delicious to say the least. And as far as Shetland is concerned, it is one of those places - far away and distant - of which I have only read and maybe seen a very occasional video. Thank you for sharing. Perhaps some day I will manage to get to your neck of the 'woods' so to speak and sample some of your delightful food fare as well as the ambience of your company. I'll dress warmly though. I'd like to see a bit more on how the fish is prepared. What is in the batter. Type and temp of the oil for the fish and for the chips. Type of potato used for the chips.
Fish batter is just flour, eggs and water. Best oil is beef dripping but that is rare these days, most places use rancid tasting vegetable oil which has a bitter aftertaste unless you drown everything in a pint of vinegar. Potatoes need a decent sugar content, not too starchy. Maris Piper is the type I most commonly hear of as a good chipping potato, I think there are better but more rare varieties.

We are on the Shetland islands...farthest North Isles of the UK. The staff at Frankie's are splendid and the food is exceptional. They all do a great job and Ashley's Coleslaw and Coronation Chicken is superb.

You're quite right. I'm always bumping into the village's blacksmith at the chippy. If it's not the local blacksmith, it's the candle maker or the cobbler.
I agree a well done video! I enjoyed it so.... I wonder if anyone in your area have thought of making fish sauce out of the fish guts and discards? now that would be sustainability !
