    this looks nice. I haven't tried snapper before, I see in the market but always stayed away from because i didn't really know how to cook it. thanks for showing this recipe. i will have to try this.

    Walmart sells the frozen banana leaves for $1.78 a pkg. My big Walmart also sells these red snapper (3 fish in a bag) for $19. Super deal.

    Hi chris, let me start by telling you I love your recipe. I wanted to make this fish dish but unfortunately my patios is under construction, so my questions is do you think it will have the same effect if I baked it under the oven.

    Hi Chris. Lovely recipe! What cooking time would you suggest if I was using a side of fish filet rather than whole fish? My family are wooses with fish bones & I have a side of barramundi in my freezer I need to use soon. It weighs aprox 2.5 ponds. Thanks for your videos. Love from AUS :)

    the fish come gutted and scaled (very convenient).. wash and use. If you don't like seeing the fins, you'll have to trim those.

    I think STEAM maybe preserves the freshness better, but grill def gives more flavor :3

    hey chris am about to try this recipe am using red fish but am going to try mincing the scallion thyme,an hot n pomentios pepper n add one garlic grain to it an rub it on the fish an baked it in the oven with the banana leaf, m doing baked because i don't have a grill,also instead of using coconut milk m going to try the olive oil since am doing the healthy eat ,thank you for the ideas though ,because of you am going to try this happens i have the fish in hands ,lol

    .. did you miss the thyme, scallion, dill, seasoning pepper? Please point me to the video you did with your way of doing this fish.

    hey we do this exact same thing in sri lanka
    we have those peppers too, just different names for it
    the only difference is we don't grill it in a barbecue, we steam it over a pot of boiling water (not in, over)

    I have recently prepared my first ever red snapper in the oven... I was scared I was going to fail, but man, did it come out great :) Now if I had a nice garden such as yours, I' d be grilling up a storm too :) Would you mind me submitting my video as a response? If you do, no problem and certainly no heart feelings ;) And yes, back home you walk to the backyard and pick some banana leaves... up here I go to the Chinese supermarket and buy them frozen, just like you did, lol... What a thing, no?

    I COULDN'T GET THE BANANA LEAVES SO I HAD TO USE WAX PAPER. THE COCONUT MILK WITH THE SCOTCH BONNET PEPPER FLAVORED IT VERY WELL. THANK GOODNESS.

    Pimento is easy as fuck to find in Netherlands. In the colonies and Suriname they use it fresh, for pica too.
