1 lb salted Pollock (salted Cod is traditionally used)
1 tomato
1 medium onion
3 scallions
2 cloves garlic
1/2 lime (juice)
1/2 medium carrot
1 scotch bonnet pepper
3/4 teaspoon black pepper
3 tablespoon olive oil
4 sprigs thyme

Hey Chris, Pollock is a member of the Cod family so it’s all good. LOVE my saltfish boljoul fo so! I serve it with sweet potato, green bananas, yams, bakes, and of course the original companion - roast breadfruit!
Yes, the original is simple! In SVG it was saltfish, tomatoes, cucumber, hot pepper, little lime juice, chives if you have, and oil, mixed together raw. Can’t beat that boy! People changing up the original but I am happy you stick with the original.

I’ve been waiting for this.I have news for you, the price of pollock has escalated here in NY too. I am going to give this a try. A Jamaican lady in the Uk gave this to me years ago, and it was hot, hot, hot. She said they usually serve it to rum drinkers🤣🤣I loved it. Thx for sharing.

I'm lucky in the uk as I only pay about £2.40(Bout $4 Canadian dollars)for my saltfish,but this week I'm gonna attempt to make bacalaitos for my puerto-rican brother-in-law whos now living in the uk 🇬🇧,and saltfish fritters and see what the difference is,please pray for me 😆 🤣 😂 and that looks delicious 😋 xx

I don't think there is any difference taste wise with Cod/Pollock - so I seem to buy pollock over cod for most things. Here in the UK it's easier to get salted pollock anyway....will be serving mine with a couple of Hard boiled eggs I think.....
P.S - we need your book to be available in the UK ;)

I spend quite some time picking out the bones from the " boneless" salt cod😕 I have to try this with the cabbage and try the pollock too. Have it with coconut dumplings drizzled in olive oil.

I so love salt fish but don’t eat it too often. Pollock works but for this but I prefer cod as well.
My sister did a taste testing of cod vs pollack. We both liked the pollack better
word eh.. I'm still partial to Cod.. but it can be overly salty
It is like Ceviche but with salted fish.
