My ole lady cooked her curry fish the same same way. We loved curried carite and the curried Joshua. Good food for hill rice. I grew up with the company villagers and hill rice was a staple.

Love this recipe with King fish which is my favorite fish. I've never made curry with any type of fish, I guess I'll be trying out your recipe. I like my fish not to over cook and get too hard, so how do one keep it from getting hard?

Your curry fish looking boss Chris. I like adding a piece of mango or some tamarind to curry fish. Learned that from my mom.
In another recipe I share I did the mango thing. Personally I don't care for the 'sour' in curry

I grow them or when I'm out I check Caribbean and Asian grocery stores in my area (mostly Toronto)
