I'm at about this stage in my form as well; one thing I notice about the pro form though, is the off arm/knee collapses before the disc gets pulled. I tend to do it all at the same time. I think what I am doing is wrong but i'm going to work on it the next month or so. Trying to find what feels right for this next level of timing.
The best way to use the off arm is to stretch the muscles in your back to jump start your upper body. It takes incredible timing which is why people get confused.

or just keep it close to your body and move on..
I notised that my throws are faster when I keep my off-hand in my shorts pocket 😂 so yeah I have to find a way to not tense myselfs up with it I quess
