Angel cake rolls with only egg white & Egg yolk buns with only egg yolk | Easy and tasty!

  • •Ingredients: #Angel cake rolls.
    Eggs: 6(only need egg white) 0:22,
    Milk 80grams 0:42,
    Olive oil 60 grams 0:47,
    Vanilla Essence a few drops(or not add) 0:51,
    Low protein flour 80grams 1:02,
    White sugar 60 grams 1:15,
    White vinegar a few drops(lemon juice or cream of tartar will also work) 1:20,
    Salt 1grams 1:35,
    •Light cream 250grams, white sugar 10grams, a little rum(we can change it as we like, if you don't like high calorie, add jam or peanut butter) 3:00,
    •Baking settings: preheat the oven with upper and bottom heat 150 degrees, bake 15mins at the low layer of the oven.
    •Ingredients: #egg yolk steamed bun.
    Egg yolk 6, 3:42,
    Pure milk 80 grams 3:57,
    White sugar 20 grams 4:00,
    Yeast 3 grams 4:03,
    All-purpose flour 220 grams 4:06,
    •Ferment the dough into twice the size, steam it for 25 mins in oven. If we use steamer, still need to ferment it to twice the size. Notice: Boil the water with medium heat, put the well-fermented bun in it and steam for 25 mins .

    老爸,我按照您的配方全都增加了1.7倍,做完之后放凉蛋糕就塌缩了,最后卷出来的蛋糕卷就只有正常蛋糕卷一半的直径……但是同一份面糊放到圆形氧化铝模具里烤出来的天使蛋糕倒扣放凉就没有问题,请问这是为什么呢?

      老爸的蛋糕看起来不厚,15分钟应该可以。还有看以前老爸烤面包的视频,烤箱的实际温度可能偏高一点。
