How to make grill with bucket (shashlik)

  • Boris makes shashlik in bucket at parents' house.
    ingredients/instructions:
    1kg pork (fatty meat is better)
    1 tablespoon salt
    2 tablespoons sugar
    2 teaspoons black ground pepper
    5 tablespoons of 30% reguar white vinegar (or less, but at least 2 i suggest)
    2 tablespoons water (you can add as much as you like, the meat will still be good)
    1 whole onion (cut into any shape you want)
    you can add garlic but it adds very little flavour..
    cook the meat over hot coals for about 10 minutes

    Anyone notice how Boris made less of a mess this time? Mama may forgive bad language, but won't forgive a disaster in her kitchen. I wonder if Boris would consider self-publishing his cookbook through Amazon or Lulu?

      @@everythingsalright1121 Anyone can help, and it doesn't have to be that much. A thanks can be $2, if that's what someone can afford. Even a like or a share helps out. Maybe we could crowdfund his cookbook to keep the publishing costs down, and even make it less expensive for people to purchase. I think in slim times such as this, an easy to follow cookbook for making food which tastes good while using basic inexpensive ingredients would be a good idea. And while "Beyond Borscht" (yes, the book title is misspelled) is simpler than the intimidating block that is "Please to the Table", I think we'd all love to see illustrations of Boris, Artyom, Anatoli, and even Vadim (Blyat) in a cookbook of his favourite Slav recipes.
      To be honest though, I'm a bit torn whether I prefer his cooking videos or his travelogues. I'd still love to see him visit historic Slav locations....can you imagine him visiting a certain Transylvanian castle for Halloween??? 😬😬💖💖😁😁

    Pro tip from my Ба́бушка: Cut the onion in big pieces and squeeze them for the juice. The onion juice has enzymes that make the meat very tender.

      @@rostokrangers3327 As a career welder, the fumes aren't toxic but they are unpleasant as shit to breathe. It's only ever an issue if you're in an enclosed space, if you're outside like Boris is you'll be fine.

    As few others also kindly pointed out, watch out when heating up metals. In this case the bucket could contain zinc which may cause a metal fume fever. That's why they don't use galvanized stuff in food containers etc. Stay safe lads.

    My mom makes mtsvadi, which is the georgian equivalent of shashlik. I've never seen the actual marinade get put together, but I had no idea about the sugar. Seems interesting, will try some day. на здоровье!

      You're so lucky - the spice combinations in Georgian food are amazing. We made the Kharcho (Beef and Rice Soup) recipe from "Please to the Table" this weekend. Just...wow.

      @@rwepnca7424 Dang son, you better inform the cookbook authors! Though, pun intended, I've got my own "beefs" with the nationalistic biases in their book, and serious misgivings about why it received the James Beard Foundation Book Award.
      I mean, it's an okay starter book, though door-stopper sized and with the usual U$ misspellings of countries and dishes, but I can't completely write it off (puns are getting worse) despite its obvious flaws. Personally, I agree with you that pork or lamb would be better than the beef the recipe calls for, but....we also raise cattle, and when your freezers are stuffed with beef, any recipe that gets creative with it helps to break the monotony.
      Next time, though - I'll take your advice, eschew the books, and look the recipe up on the net instead. 👍

    I feel obligated to point out, as I can't tell myself, if that's a galvanized steel bucket then it will give off zinc fumes as it heats, which can be poisonous.
    Not that I'm speaking from experience, no, that would have been making a grill out of a couple cinder blocks that nearly exploded from thermal stress.

      @@fadhilyudistira8819 Stainless isn't Galvanized. Galvanized literally has a coating of zinc on the outside to resist corrosion, stainless is an alloy that's naturally corrosion resistant.

    Seeing Boris estimate in cooking makes me remember when I was cooking adobo and I thought, "Hmm, I read about people putting seasoning until they feel their ancestors tapping them in the shoulder" so I tried that but then all went pizdec when I opened a bag of whole black pepper then half of it went down to the cooking pan or whatever. Anyways, I reported the pizdec to central command and said it was approved then I tasted it and to my surprise, it's decent.

      I wish this community would stop idolizing and romanticizing gopniks like they are some cute friendly friends. Gopniks are super predators who don't know/want anything else but to drink, steal, beat up and sometomes kill. They are usually locked up by 25 and proud on it.     Be careful with choice of bucket, a galvanized steel bucket seems like a good way to get zinc fumes in your food and that's not good

    Boris, you should try a method I found for making pork shoulder: after cubing your meat, place it in the pot and cover it with just enough chicken stock to submerge everything. Simmer it at a low temperature for several hours until the water is evaporated and only rendered fat is left. At that point it should be very tender and lightly fried.
    For extra flavor, I would recommend throwing your spices and aromatic vegetables in a blender with the chicken stock, and puree it until smooth.

      Where i come from, we don't eat pork at all, and Shashlick is made from lamb (also chicken).

    Doesn't one risk getting a zinc poisoning like this? That is a galvanized bucket and the coals can get hot enough to vaporize zinc.

      Probably, but as long as you aren't regularly cooking with a bucket you'll probably be fine (or just get a not galvanized bucket and don't take the risk lol)

    Pork + honey and garlic marinade, hoh. Maybe even a bit of beer, and most certainly a bit of vinegar. Or if you want a turbo marinade: fresh pineapple juice. Warning: if you let it marinade with pineapple juice too long, the meat will become soup. In a very negative way.

      Terrible is right. I prefer a nice 5160 high carbon steel. If it's good enough for car leaf springs, then it's good enough for kitchen knives.

    I thought you're gonna make a Genghis Khan, a Norther Japanese-style of grilling their mutton with a bucket. I'll try this if I can find a metal bucket here. Gonna be kinda hard since most of the buckets sold here are plastics.

    Boris my friend, hate to be that guy, but you really shouldn't be using what i think to be a galvanized steel bucket for cooking purposes. Galvanized steel containts zinc in it, if you heat it and scratch it like that it will release zinc fumes which are really bad for your health.
    Instead, if you want to make a cheap makeshift grill, you can go to a scrapyard and find one of those old steel car rims ( the ones that usually covered with plastic caps ). sand it down to bare metal and cover it with heavy metal free high heat resistant spray paint. I dont think they will cost more than 2 or 3 of this bucket. but will last much longer. Anyway hope to see you well. take care..
