Freshly Milled Wheat Stuffed Rolls / Hot Pockets

- Sue Beckers Red Book (Double this recipe for 3 loafs of bread)
1 1/2 cups hot water
1/3 cup oil
1/3 cup honey
2 tsp. salt
1 egg (optional)
2 tbs. lecithin
4 - 4 1/2 cups freshly milled flour
1 tbs. yeast
Mix for 8 minutes in a mixer until you can touch the dough and it doesn't stick to your hands.
Divide into 3 equal portions
This recipe us one portion of dough to make a 9 by 13 filled rolls.
Divide dough into 20 equal pieces
Stuff with you choice of savory or sweet fillings, I used left over ham sautéed with mushrooms, onions and garlic. And pepperoni and mozzarella for the the other.
Each of the 20 pieces try to make into circles roughly the size of your palm.
Fill and close up dough into a ball making sure all the seams are together so none of the filling leaks out while baking
Fill the 9 by 13 pan with 5 rows of 4 leaving room in-between to rise
Let rise 30 minutes
Bake at 350 for about 20 minutes

Looks tasty! One of those mini fondant rolling pins might be good for little hands to help roll out the dough without poking holes

Instead of baking them together, place them individually on a cooking sheet, and brush with an egg wash. That way, it is easier to handle and store. That’s what I do with Latvian Piragi. They are individual bacon and onion filled dough.
