Freshly Flaked Peanut Butter Granola

  • Ingredients
    5 cups freshly flaked oats (quick oats, whole rolled oats are fine, no steel cut)
    1/2 cup peanut butter
    1/2 cup honey
    1 tsp vanilla extract
    Directions
    Pre heat oven to 275. Heat peanut butter and honey in 20 second intervals and stir in microwave until runny. Add vanilla into the peanut butter honey mixture. Then pour over the oats until well incorporated. Pour out onto a parchment paper lined cookie sheet. Press down to an even layer. Bake for 10 minutes. Pull out of the over and stir.
    For bars - press tightly together to form a rectangle, be sure it is compacted. Bake 9-10 minutes. Let cool then cut into desirable bar size.
    For crumbles - make an even layer and place back into the oven for 9-10 minutes. Pull out of oven and break it up then let it cool.
    As it cools the granola will get crisp.
    Another Granola Bar Recipe
    7 cups oats
    1/2 cup oil
    1 tsp real salt
    1 1/2 additions (nuts, raisins, chocolate, etc.)
    3/4 cup honey
    3/4 sucanat or brown sugar
    1 tbsp vanilla extract
    Optional
    2 tsp ground cinnamon
    Pre heat oven to 375. Combine oats, oil and salt. Pour out onto a lined baking sheet. Bake and stir every 10 minutes until pale gold, about 20-25 minutes. Remove oats, lower oven to 300. Combine honey and brown sugar in a sauce pan. Cook for about 5 minutes over medium heat, stirring constantly until everything dissolves. Remove from heat and stir in vanilla and cinnamon (if using). Combine all ingredients into large bowl making sure everything is incorporated. Place back onto the lined baking sheet. Spread into an even layer. Bake until golden, about 35-40 minutes. Allow to cool completely before cutting.

    😆 You are a ray of sunshine. 😂 I just made Granola last week. But, your recipe looks WAY easier, so I'm going to give it a shot. One thing I do, when I want bars - would be the second bake- I get my bench scraper and cut my lines for the bars, then back in the oven. Once they are cooled, DONE!
