I know this is an older video, but I've been making this soup ever since I discovered this video. It's my comfort soup. It's the food I make when I'm sick, or when depression takes me. I make this soup when I've had a bad day. This soup gives me something on days when I have nothing, and it's really special to me. Thank you so much for sharing it with us!

Looks delicious. My mother used to have soup on the woodstove when we came home from school. The combination of wood smoke and hot soup was the most welcoming thing imaginable

@yerb 1970s. My parents were part of the back to the earth movement. It was great. They bought a small acreage with a really old house, fixed it up, didn't mind that it didn't have heat or plumbing, shopped auction sales and we grew up on homegrown, home-made everything. It really was glorious.

I live in a 120 yr old cottage here in New Zealand, and while I have a modern stove - I use the original wood stove all winter. There's always a pot of soup bubbling, plus it heats the hot water and saves on the power bill. The old wood stoves are much sought after here.

On snowy days when my daughter Brodie was little I used to make potato soup and cinnamon rolls from scratch. Brodie and her Daddy would be outside shoveling the walks and clearing off the cars while I was busy in the kitchen. Nice memories.

My grandmother used to make something similar, but she kept the diced veg chunky and added pearl barley to thicken it. I make it myself nowadays; it keeps a few days in the pan on the stove, and actually gets better during that time; just keep ladling out a bowlful and reheat it in the microwave. My dog also loved the dregs from the pot poured over his kibbles.

For any of my vegan cooking I just use coconut oil for the saute, plus a bit of extra virgin olive oil or avocado oil at the end for a "buttery" flavor. I'm astonished by how rapidly the frozen pea ball-bearings softened and cooked through in that non-simmering soup. I don't feel confident about replicating that part of the recipe myself because every time I cook with peas they take just that little bit longer than I imagined they would. So I think I'd add peas that had been pre-boiled for a little bit. If that sounds like it would work out, then this dish looks so delicious that I could see myself having two bowls over the course of a winter afternoon-- yum!

Lovely! This has some of my favorite things in it. TIP: keep those peels on! If organic, there's no need to remove those extra nutrients and the peels make the soup that much more rustic.

Roasted broccoli, cauliflower, carrots, zucchini, turnip, parsnip, bell pepper, onion, celery with half olive oil and half avocado oil today for our side dish. Do up some potatoes tomorrow and add the rest of the vegetables in with some cream. YUM!! Going to be (-35) Celsius for a few days and big snow storm start of the week. Lots of soup to come. Take care everyone ❤ from Canada

Been holding onto this recipe for 3 years, then FINALLY made it for the family a month ago...and I have been making this weekly since!! While I had to make a few adjustments((non-dairy, so just added more plant butter, no parsnips at local stores, so replaced with Korean turnip)) and it is just sooo soooo good!! I need to make your bread recipe, but I have paired the soup with a no knead, artisan bread, and roasted chicken ...and 💋👌

So I've never been much of a cook, but due to the "times" we're living in, I've found myself having to, like so many of us, get busy in the kitchen. It's colder now and we love soups. Our local Whole foods market, just blocks from home, has closed their "soup bar", and I'm not starving so I'm not down to canned soups yet (PLEASE GOD NEVER!!). I found this Veggie soup so darned easy, and it was wonderful. I love that you can exchange veggies for what you can get right now, and it all seems to work out find. I put a drop of creme fresh and sprinkle parsley on top, the family can't believe I'm cooking these soups myself. So glad I found this cooking site, because if I can do this, honestly ANYONE can. I look forward to viewing many other videos and get crackin' feeding the family.
