  • Slow braised beef and cheese dumplings- this stew is the ideal winter comfort food!
    You'll need:
    US Ingredients:
    For the stew:
    2 tbsp olive oil
    1.6lb beef flank or bavette
    2 tbsp plain flour
    1 onion, sliced
    2 large carrots, peeled and diced
    3 garlic cloves, sliced
    2 thyme sprigs
    1 cup red wine
    3 cups beef stock
    For the dumplings:
    2 cups self raising flour
    2 tbsp flat leaf parsley, chopped
    1 stick butter
    ¼ cup cheddar, grated
    ½ cup milk
    Sea salt and freshly ground black pepper
    Metric Ingredients:
    For the stew:
    2 tbsp olive oil
    750g beef flank or bavette
    2 tbsp plain flour

    200ml red wine
    750ml beef stock
    For the dumplings:
    250g self raising flour
    2 tbsp flat leaf parsley, chopped
    100g butter
    50g cheddar, grated
    100ml milk
    Sea salt and freshly ground black pepper

      @@Wishchrono Alas, the casserole dish eluded me; I thought I had a rarely used one in the back of one of my kitchen cupboards, it was but a mirage. I need to buy something oven safe first. This is by FAR my top new recipe to try this winter, so I'll pop back and let you know.       What I would do is boil the potatoes separately in water with beef stock. Cook until just tender then drain. Spoon stew over potatoes. Or else like Donal says to serve over mashed potatoes.

      You can throw them in when it’s about 45 min to an hour before it’s finished.

    When I saw this video I knew my Father would love it! Once I tasted it I knew he would have to fight me for the leftovers. So easy and my house smells wonderful. I actually used the moose meat from my 82 year old Father's hunting trip last year. I think that made it even more special. 5 years ago we all thought he would never even drive again let alone hunt. Thank you for our new best stew ever.

    I really don’t like the whole music track being played whilst subtitles show what’s going on. I prefer the whole you just explain what’s going on and you chat during the whole thing. Just seems more personally. I can watch somebodies hands cook food anywhere anytime. If I’m going to a specific persons channel it’s because I want to experience them and their style.

      skirt steak or Hanger steak, failing that chuck steak. An off the wall substitute would be beef cheeks which are cheap and becoming available in more supermarkets these days.

    BTW, didn't have self rising flour, but easy to substitute. 1 cup flour, 1/2 tsp. Salt & 1-1/2 tsp baking powder sifted together.

    While the video States 160 degrees Celsius your recipe on your website States 180° c. I tried the dish tonight cooking at 180 (350 Fahrenheit) and while flavorful all of the liquid had evaporated by the two and a half hour mark.

    As a Filipino (and Asian in general), I still get confused whenever I see 'dumplings' that look like biscuits, although I've known and tasted chicken and dumplings a decade ago! 🤦🏼‍♂️😅

      Baked is biscuit , steamed or boiled is dumpling. He steamed / boiled it on / in the stew , so it’s a dumpling, but he also baked it in the oven, so it’s a biscuit.
      Both apply in this case. No matter ... They look yummy.

    I would usually marinate, grill and thinly slice flank served in fresh tortillas. But, it was cold and gray last Sunday in Berlin so used a fresh flank steak for this recipe and it blew our minds - was amazing! As a Texas boy I'm used to dumplings (usually with chicken) but wow, these cheddar dumplings are just fantastic in this beef stew. Make this!

    Donald, excellent recipe but you are confusing me. In the video you say to cook at in the oven at 160C; the recipe that you link to says pre-heat to 180C and in neither case do you mention convection / fan ovens. So I cooked it at 160C (fan) and while it was incredibly tasty, most of the sauce disappeared and I had to add more stock when I added the dumplings. Think next time I should go with 140C (fan)?
    BTW, despite it being drier than expected, it was still exceptionally tasty and there WILL be a next time XD Those dumplings!!!

      Same thing happened to me with 180C, stock almost completely disappeared. Added in another 500ml when I put the dumplings in. Haven’t tried it yet but for people trying it I’d suggest putting in 1000ml from the start

    I made this stew for Christmas Eve and it was a hit! Thank you for the recipe Donal! The only thing I don’t understand is the heaps of salt you add to every step. I didn’t use any apart from the cheese and beef stock and it was already salty.

      Beef Stock is fairly salty as is and as it reduces, the saltiness becomes more concentrated. Try some low sodium or salt-free stock and if you have time, you can even make your own beef stock.

    Was waiting for him to walk away with the plate of food at the end 🤣 its the signature tv chef move hahaha but made it tonight and its a lovely meal. Had it with loads of veg and roasties and mash very nice and a good way to get the veg into kids had my 4 year old help out and shes very enthusiastic about cooking which is brilliant

    In the video you mention the oven temperature to be 160°C and the website recipe mentions 180°C. What would be best for 2.5 hour cooking time?

    Made this. In the video he says 160 C and on the website it says 180 C in the over. I followed the website instructions and all the liquid evaporated away once the 2 and half hours was up.

    This looks great. I have my own beef stew recipe that includes celery, shallots, fresh green beans, fresh corn cut off the ear and mushrooms (usually baby portabellas) and I also include rosemary and marjoram but may omit one or both. I also add instant tapioca as the thickening agent but I need to employ the flavor building techniques in this video when I make mine. The addition of the dumplings is brilliant and I'll be trying them although a slice or two of fresh bread is pretty darn good too.

    Happy New Year Donal! Thank you so much for this wonderful recipe. We had it for New Year's Eve dinner and my husband just fell in love with it. We put in some beer instead of red wine and that was the only change we made, it was absolutely delicious and I look forward to making it again.

      to get this kind of meat tender it is enough to have it on a low heat on a stove and let it simmer for 3 hours. if the dumplings will get warm enough is a different matter. i guess they will not go brown on top .

      Hi, just add 2 teaspoons of baking powder to every 150g plain flour to make self raising flour. Mix well with a spoon, works well
