Rick Makes Double-Pork Carnitas and Corn Tortillas | From the Test Kitchen | Bon Appétit
HTML-код
- Опубликовано: 11 ноя 2018
- Rick Martinez is back in the Test Kitchen to make double-pork carnitas with corn tortillas and green pico de gallo. That's right, these carnitas use two kinds of pork (shoulder and belly) because one is definitely not enough.

ABOUT BON APPÉTIT
Bon Appétit is a highly opinionated food brand that wants everyone to love cooking and eating as much as we do. We believe in seasonal produce, properly salted pasta water, and developing recipes that anyone can make at home.
Thank God for this guy there's only so many BA types of pasta my body can have lol
Haven't seen Rick in a minute, happy he's here tho!
This is my first video seeing him, hopefully B.A. gives him more screen time, he has a ton of personality !
*sigh* so much for more Rick
*The boom op's face at the pork cooking sounds was the best part of this video*
6:02
“I’m going to season this pretty generously”
*puts less salt than Andy’s ‘lightly seasoned’*
Fun Fact:
I used to work at a Kitchen where we called four different types regarding the amount of olive oil used.
light splash
moderate splash
generous splash
the Ramsay version of light or just short: the Ramsay
@@CedricBassman thats snazzy
yeah Andy uses a ton of salt!
That was not 1/2 teaspoon salt going into the masa for sure, maybe he double the recipe..
But also...... Molly and her seasoning
Loving all these new presenters ! So nice to see the rest of the BA staff ❤️
WARNING! I have 2 very attractive girlfriends and I am the greatest RUclipsr ever and YOUR savior. Good bye dear jkate
He's not new, he just hasn't been on camera in a while
Rick's not new, he's just been away from the scene for a bit
He's been in BA but he left I think and is now just a contributor.
Is he also on eater? Cant remember where else i seen him
That apron is really great.
Yes, I want one too.
I love the lucha apron so much
Amazing apron, A++++
hey fancy seeing you in the comments section, lol. I love watching your videos
Is it just me or is that Nacho Libre?
WAAA JMCROFTS WATCHES BON APPETIT. WOW
Yay Rick with the authentic Mexican foods! Also those nails are amazing
This is pretty damn far from authentic. Its quite a long list.
I was going to say . Them nails are on fire.
Mexicans don't put cabbage in their tacos
@@billypilgrim1 depends on where they're from. The cusine from northern and southern Mexico can differ vastly.
@@camlock6319 Mmm I've seen cabbage in fish tacos in Sinaloa and Baja but I'm pretty sure that stems from US influence. Carnitas, which is traditionally from central Mexico, does not.
I LOVE carnitas with fresh tortillas 😩❤️ My favorite video by far 🙏🏼
3 seconds in and i know for a fact this man has more style in one drop of his nailpolish than i will ever experience in my whole life
I LOVE BA, but nothing makes me happier than seeing a POC cook some close to motherland recipes. Thank you so much! I still love Brad though.
i need everything Rick is wearing, it's all so great
I also need him not to wear anyth... Eh... Ooohhhh... 😍
I knew this was gonna be a good video right from the get go. Partaaaaaaaaaaaaay.
When I saw his fingernails, I thought "Why?" And then I thought "Why not?"
Same same
I was kinda destracted at first but other than that i didnt realy care
Depends on a person I guess. I dont like nail polish on anyone, especially on those long fake fingernails. I feel it ruins a nice pair of hands. But yeah, you do you.
Interesting 👀
@@DaynaDevi oh?
Rick is the kind of person that I would love to have as a friend and as a teacher. He explains things so easily and kindly that I wouldn’t need to hear it repeated again. He is absolutely such a cool dude! Thank you for your cooking of carnitas! I am going to make this for my family!!
RICK IS BAACCKKKKK
on behalf of mexico I thank you for not using sour cream on a taco gracias
why is sour cream on a taco bad?? I love sour cream on tacos :(
@@skibbz0r If you like it then eat it. Some people prefer it more 'authentic' but we all have different tastes.
What you should have said was “on behalf of Mexico, you’re welcome”. My god that looks good. I grew up in a very multicultural area and was on a mostly Mexican-American little league team. A friend’s mom made carnitas (among other wonderful things) and though there is lots of good carnitas where I live none has been as good as home made.
i enjoy authentic ones without it, but light Sour cream goes great on a chorizo taco
@@skibbz0r didnt say it's bad, it just ain't the real thing, it became texmex thing, also cheese isn't used.. but you know y'all can add ketchup on it for what I care but that's not the authentic taco
"i like them on the thicker side"
hell yeah.
I love watching Rick because it’s like watching my grandpa and mom cook. I grew up with ALL the food he makes and let me tell you he does a great job
Rick makes the best videos. He doesn’t try to be fancy like a lot of the BA cooks. Best recipes!!! Best nails!
He does ooze authenticity in everything he makes. I always enjoy his videos.
Love this recipe. Hits all my personal turn-ons. Slow cooked pork + Mexican flavor = Greatness
"This is my third lunch of the day, and it's awesome." If I worked at Bon Appetit, I'd absolutely turn into a sphere from all the eating.
Jeezus Christ his nails are amazing
hopefully its just for the video and not what im thinking

First time watching a video with Rick and I really enjoyed it. Love his aesthetic and level-headed straightforward cooking style. My only complaint is that the test kitchen seemed kind of empty and sad; I love the lively atmosphere these videos usually have, seemed liked they filmed it on a Friday after everyone left.
Either way, great video! I'd love to see more!
Someone mentioned that it was cozy to them. Winter nights when it's getting late, everyone is leaving for the day, you're still hard at work because you love your job so much. I thought it was nice interpretation and so that's how I see it, as cozy! :)
That waving shot was precious 😍😍
It's great to see Rick and maybe I don't watch this enough, but it's great to see a bunch of faces at the end that we normally don't see on these videos. I"m going to try this one for sure!
I love all videos with Rick. Mexican cuisine is one of my absolute favorites and he's such a warm and inviting host whenever he's making a video plus these are one of my favorite foods ever.
Rick … we’re crazy about you. All of you are simply DIVINE!!! ☀️💛
I love this. thank you, Rick. Making it for our party tonight. It's my friends birthday party. His birthday was on the 4th and it is the 12th now but nobody would be able to come if we had the party on the 4th because most people spend the 4th with their families because they have barbeques and whatnot. Personally, I'm feeling a little down on America, but if you want to celebrate, Go for it. Anyway, Rick, looking forward to tonight. Going to make some delish food. I will let you know how the party goes and how the dish is received. Best, Max Addendum, We are actually going to make the pico at 7, because guests will be coming over at 8 and I don't want it to get soggy. So yeah, the fresher - the better!
What a charismatic host. Looking forward to seeing more of Rick!
Partaaaaaaayyy! Carnitas are the best thing Mexico has to offer, with Al Pastor a close second. More Rick!
What about guacamole?
Pedantic botany correction! Tomatoes and tomatillos (and husk cherries) are in the Solanaceae family, so they actually are related! Meanwhile, gooseberries are in a completely different family, Grossulariaceae.
I like him, hopefully he does more videos for BA
He did some videos/a series about food in Mexico awhile ago. Happy to see him return though with more great food.
Rick is just a badass
Don't know about badass..does seem like he's using ba programing time to advertise that he is looking for some to boneindaass
Boneidass,hahaha!
Nice dude
I just made this for my friends today and they all loved it!! Thank you so much for bringing home a taste of Mexico here in the U.K! I switched out the pico for mango habanero just for some more spice. It was messy but so worth it!!
*Rick grabs an enormous spoon to stir the salsa*
Me: Oh, he's going to wangjangle it!
Lolololol
Rick and Gabby should team up to do some Latin American cooking!
Juan Chavez Seconded
Empanadas, Steaks, Mole, Tortas ufff
yaaaas a whole series
Lmao love how he just drifted off into casual conversation
tacos always brings friends and family together, can't go wrong.
Wow wonderful to hear such exuberance about tortillas - thanks Rick for the insight.
I thought "double pork" meant twice as much pork, and I was wondering how your pork was going to have twice as much pork.
the meat is only from pigs that eat other pigs, true story
@@feastmode7931 Fair.
Dosent it mean twice fried
lee bags he said it’s “double pork” because he’s using two different cuts of pork (shoulder and belly)
Gabby is so adorable!
A video with Gabby!!!
She always steals the show! From popping up with Brad or Claire or Rick, her few seconds on screen are always the coolest 😁
I'm mesmerised by Rick's hands & that amazing nail polish 💜
I have watched your video like 5 times over the years. Still a killer video recipe. Love it.
Awesome stuff Rick, I’m liking these!!!!
0:38 There’s an exorcism in the background.
Հովսեփ Խաշունի you mean the woman behind him? How? She's just holding up a piece of paper towel...
LOL!!!!
NadlieHime 1814 Is that what that is? On my small screen it looks like she’s shaking her head uncontrollably.
Հովսեփ Խաշունի If you focus on the guy it does look like an exorcism but once you see her hand you can't unsee it... lol 😂😂😂
Hahaha omg you made me laugh
That apron 👍and the tacos de carnitas😋
This channel needs a lot more Rick episodes!
Alex is truly the king of eating messy food wearing white. We stan
This man is incredible.
Never seen Rick in the videos until now and I love him already. Excited to see more from him!
My husband and i just spent the last 5 minutes saying tortillas in rick's accent. it was time well spent.
I'm completely distracted by the awesomeness that is that apron.
The apron + those awesome nails = rocking the whole kitchen. More Rick please!
um love Rick! how is every single person in the test kitchen lovable?
I'd been thinking for a while that the test kitchen needed some latinx representation, because we see some latinxs in the kitchen but we never actually see them cook!!! the notification for this video made me soooo happy, and then I clicked and i saw what rick is doing and WHAT HE'S WEARING and im soooo sos o so ososooso happy
I haven't even seen the cooking part but I just have to comment on how much I love your apron, shirt and nail color. You look great.
When I get to a kitchen I'm going to paint my nails and make this. I love carnitas
Yah much love for carnitas! I usually take the shoulder in my instapot for 1:30 with jalapenos and onions and 1 cup chicken broth, take it out and then fry in a pan with the juice in the pot. Always a winner! Now...just to get on those fresh tortillas! Once you go fresh, you'll never want store-bought again.
So authentic
I can't wait to make my momma and dad proud with this recipe
Thank you!
Love when he slips up and says Spanish words with an English pronunciation. Lol
or vice versa, english words with an accent like when he said 'tortilla station' the station came out in an accent
Whatever dude, I WANT THAT APRON!!! Am I the only one?
Rick is such a natural in front of the camera, he should have a bigger role on the Bon Appetit channel!
this is so wholesome. more Rick please
I love Rick Martinez' look. His shirt, apron, nails, and his lovely dish of carnitas.
Tortilla Rick
this guy's style is impeccable. that shirt and that apron combined with his complexion really is amazing styling. plus the glasses are a great fit. I love talking about aesthetics so this look definitely caught my attention.
just a quick tip if you don't have a tortilla press, you can use two plates pressing with the bottoms to make your tortillas and it works just as well. It's what I have done in desperate times!
uhhh wow he's such a silver fox :) i adore his nailpolish!
BA's best bruschetta recipe with Carla's fav crusty bread please!!
Tortillas made my mouth water. Takes me back to eating a tortilla right off the stack when had to go to the tortillería to buy the tortillas (every other day) . They would take your soaked maíz, ground it up to masa, and put it through a machine that spit formed and pre-cooked tortillas on the other side. They made on ‘em on the spot. Handy when your family, mostly the boys, went through dozens a day. Tortillas you get nowadays from the store can’t compete on any planet. But, they’re “ok” since I’m not about to make my own now. Ain’t no one has the time.
I don’t eat meat but I will try the carnitas this way next time I make ‘em for the fam. I think they will love and less babysitting them on my part the way I make them now.
You could tell he's so proud of Mexican food and culture
drink every time he says "torrti-yas"
I was thinking the same. Anything that had a roll in the pronunciation
That’s how you say it in Spanish lol
@@Tearyatobitz i know haha
I was laughing the whole time.. I was like nobody in America cares .. always cracks me up when people have to pronounce things in its original form when speaking English... 😂😂😂
Tequila on me! Who’s in!?
Oh my lord I'm so hungry don't do this to me...
I’m so happy BA is representing more POC and their dishes. I honestly am here for it! I feel so included just by seeing people of color cooking their childhood meals
I've never seen Rick before, so HOLA. I like the fact everyone was chowing down, but I also LOVE Rick's apron.
Damn where has Rick been i thought he left?
Rick is so beautiful
Omg I was just wondering where Rick was and found out he left and glad he's back as a contributor!!!
I LOVE YOU RICK!!! protect him at all costs
Looks amazing! I've never liked corn tortillas; mainly due to the texture, but the lack of flavor is an issue, as well. Of course, I've never had "real" corn tortillas, either. I think these would be fun to make with my daughter, actually. Challenge accepted!
These look amazing 😍😍
i am drooling, so professional and i love seeing people that love what they do and really know everything about it
Rick gets a bigger crowd for his dishes than anybody else, it seems.
The tall lady is so beautiful 😩
Yum yum... love this... looks delicious... im a little distracted by the blue nail polish... ok, a lot distracted.
mcmraw agreed. The color was shocking
MORE RICK! He's awesome!
definitely need more Rick, this recipe looks amazing!
Rick is the coolest guy in the world. LOVE the painted nails.
also real sad you can't get fresh masa here in sweden, cornmeal already costs an arm and a half
Finally, a carnitas recipe without cumin!!! I can't wait to try this.
"this is my third lunch of the day and it's awesome"
She is me
Every week, along with a few other grad students, we have what we call "taco time", where we make fresh tortillas for lunch and everyone brings taco fillings. It's one of the best parts of my Monday every single week.
Dude love the nails and apron
I wanna eat those right now!!!!!!!!!!!!!!! :P-Elizabeth
Rick does the Mexican culinary traditions proud! You should have rick make more videos ASAP!
I used to live like one block away from a gas station where a taco truck would park every night, and they absolutely had that "confit cauldron" Rick mentions at 4:13.
Great recipe! Except for the cilantro. Cilantro tastes like soap to me, unfortunately.
But wait -- are you actually using _culantro_ instead? I've heard that culantro -- Mexican coriander -- doesn't have the same soapy-tasting effect.
same thing - coriander and cilantro are the same plant.
I was gonna say cilantro is Spanish for coriander. Culantro is a more intense flavor.
You can skip that part cause I hate it too
i've heard that some people that don't like cilantro think rau ram or culantro taste okay. they are similar flavor herbs, but usually harder to find in most areas. i think they all taste nice.
Vaylon Kenadell
It’s all lies!!!!
I’ve tried Culantro and it’s just as soapy!
Bold nail polish dude! Such a statement!
what does it mean?
"i want attention" would be my best guess honestly.
@@DIVAD291 what's wrong with wanting attention it's better than being a wallflower
@@krishna__2007 well its kind of a complex question. ill try to keep it short.
attention is basically a resource and when you do things that are otherwise useless just for the sake of attention you are diverting ressources away from areas that need them more.
everyone needs attention, thats a normal human need. but superficial attention thats gained by essentially tricking people into paying attention to something thats actually unimportant is not cool.
this is a pretty general concept but it also applies on a much smaller scale...by example if we had a conversation about something you find really interesting but while i talked about it i also pinched my nipples as hard as i could you would get distracted and miss a bunch of stuff that you were interested in because of my desire to draw attention.
wanting attention(at least this kind of attention) is often a facade thats there to avoid people looking at who you actually are.
so to me someone who does stuff like that is selfish for taking attention away from things that probably deserve it more and disingenuous because they are hiding aspects of their personality and simply annoying because its distracting without actually being important enough to justify the distraction.
TL;DR:im not good at keeping it short.
I have used this recipe many times. It is our go to Christmas Eve meal. Very simple to make, but with lots of flavour.
