Banana cake bread recipe. This moist banana loaf cake is easy to make and absolutely delicious. You will sure love this cake.
Ingredients for Banana Cake bread recipe:
2 ripe or or overripe bananas
One large egg
1/2 cup white sugar
1/4 cup brown sugar
half a cup vegetable oil(about 120ml)
1/2 cup milk
One teaspoon vanilla extract
2 cups All purpose Flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon powder
Mash the bananas in a small bowl and set aside for later use
Beat together eggs, sugar, and oil together until combined
Add milk,vanilla extract and mix well
Sift in flour, salt, baking soda, baking powder and cinnamon powder
and mix until well combined. But don't over mix to avoid the formation of gluten
that can result in a stretchy cake
Add the mashed bananas and combine.
Pour into a lined or oiled loaf pan and bake in preheated oven
at 170ºC or 350F for 35 to 40 minutes or until skewer comes out clean
(I used a 26*12*8.5cm loaf pan)
Leave to cool a bit serve and enjoy
