He may not be the most well-known guy out there, but this guy has a passion for food that is different from many other people that I've seen. A genuine love for food that everyone can relate to. Nothing classy like higher end chefs, but they believe in simple dishes that normal people at home would make. Love this guy, and I believe he deserves more recognition. Give this guy some time on the tube!

I tried this today with just 2 changes I used Garam masala powder in the end instead of the whole spices used in the beginning and used some regular green chilies. It tastes, smells and looks exactly like the restaurant stuff. Thanks a lot.

Ode to chicken tikka...."It burns my senses and throws me back to days when life was simple. The sound, the chop chop chopping, the scent of spices roasting. The awakening disturbance of the blender, the time waiting for the chicken to be tender. The rice of course will judge a man/woman...the widening retinas take in the red roast charcoal and then the first bite. As if some dull opiate had been emptied to its drains. Heaven is here on my plate." Thank you Sanjay.

thanks! I love the way this turned out, even though I didn't have the right spices (used Jamaican curry and graham masala ) and used cottage cheese instead of yogurt. I made a large dutch oven full and we didn't mind eating leftovers, it gets better every day. I'm going to try it again today with eggplant instead of chicken.

VahChef, I appreciate the fact that you use fresh ingredients instead of canned products in this recipe. I had to cook this two times because when I made it the first time, I ate the chicken tikkas after cooking them and there wasn't anything left to add to the masala. The marinade was absolutely perfect and the tikkas were delicious.
When I made it the second time, I followed all the steps and the dish was heavenly! :)
The only thing that was not mentioned in the recipe was the temperature of the stove for cooking the chicken tikkas and the onions. This info helps amateur cooks like me who assume everything can be cooked on high flame. But, I kinda read between the lines when you said that we should cook the dry masalas on low flame. :)
