The amount of different spices needed is what makes indian food so distinctive and flavourful.
And also the reason why i could never get myself to cook one myself haha

+boy638 don't be discouraged! I'm Polish and I used to eat loads of cabbage and pork at home (yeesh) and now I'm cooking anything!! Go out and buy the colorful spices. They are rather inexpensive :D

Been dying to make this so took a stab at transcribing the recipe. I'm from the US, so apologies to the metric loving rest of the world. I dug through the comments too and added some notes of things @foodwithchetna recommended when ingredients couldn't be found. I'm sure I messed up here and there.
    Chicken Marinade
    1/2 cup natural yogurt
    1/2 tsp turmeric
1 tsp kasmiri chili powder (or 1/2 tsp regular chili powder)
    1/2 tsp garam masala
    1 tsp salt
    4 cloves garlic (grated)
    thumb-sized piece ginger (grated)
1 tbs mustard oil (or sunflower)
1.5lbs - 2lbs boneless chicken breast (sliced in to strips)
Combine all ingredients above, making sure to coat all of the chicken. Cover and put in the fridge for minimum 2 hours, but preferably overnight.
    Cashew Marinade
Combine 2oz cashews and 2oz of whole milk and soak for the same amount of time as the chicken marinates.
    ----
    Preheat oven to 400F.
Lay the chicken flat in a baking dish coated with vegetable oil. Bake for 20 - 25 minutes to get it golden brown and careful not to let it burn.
While the chicken is cooking... Make the sauce.
Heat some vegetable oil in a skillet over low-medium heat. Add the following whole spices:
    1 tsp cumin seeds
    a few bay leaves
    a few black cardamom pods
    a few green cardamom pods
    1 cinnamon stick
Let it cook while you roughly chop 2 onions and a few green chili sand add to the veggie oil, sautee the onions for 5-7 minutes on low-medium heat.
    While the onions are cooking...
Grate 3 cloves garlic and small nubbin of ginger in to the onions and cook for a few minutes. Then add 5 chopped tomatoes and cook for 10-15 minutes on medium-low, covered.
Add 4 tablespoons tomato paste and chopped cilantro stalks (more flavor then leaves). Cover and cook for 10 minutes...
Mix these spices to the sauce and cook for a few minutes:
    1 tsp coriander powder
    1 tsp kasmiri chili powder
    1 tsp garam masala
    1/2 tsp turmeric
Add the cooked chicken to the sauce and mix it in. Grind the cashew nuts and milk in to a paste and add to the sauce. If at any time you ever feel it is too dry and you need more water, feel free to add.
Optionally, square some onion and green pepper for extra crunch.
Stir in 2oz of heavy cream (I don't know what double cream is). Top with chopped cilantro leaves. You can take the whole spices out, but it is traditional to leave the in.

This is a great recipe! I cooked this for several people and they loved it. But with recipes that are so long with so many ingredients it would be really helpful to have a summary and a shopping list somewhere. Like I had to watch it 6 times and write down everything in order to be able to cook this dish...

I just made it for our 6 years anniversary and it turned out wonderful. I took the cloves and bayleaves out before adding the tomatoes so that we wouldn't bite on any but the flavour had already been absorbed by the oil so it was fine.

Ground coriander, turmeric, garam masala, Kashmiri chilli powder. All of them will be in your local supermarket if you're British, but you might have to go to your Indian/Pakistani supermarket for the Kashmiri chilli powder.

    • @FoodwithChetna
      @FoodwithChetna 9 лет назад +11

+ananym they taste totally different! black cardamom is really strong and only used for savoury dishes whereas green cardamom is sweeter and therefore used in sweet and savoury food, hope you will give this a go!

    • @davidvivian2896

Made this tonight. No mustard oil and used a chilli powder other than Kashmiri but I think I can say that this was the best Chicken Tikka Masala I have ever had :-) Excellent Recipe Chetna!

This is defo the best recipe I've seen on chicken tikka masala. I would personally use almonds in place of the cashew due to my cashews and pistachio allergy.

I just tried the recipe today and my SO loves it! I am glad I got to try this recipe out. Keep the cooking videos coming!
Note: you could have probably mention how long it takes for the onion and tomato to turn into a brown paste. Didn't expect that at all.

I just made this vegan by using coconut yoghurt in the marinade and using more cashews in oat milk instead of cream!! for the chicken I used 'THIS isn't chicken salt and pepper pieces'- expensive but worth it. I really miss chicken tikka masala ready meals from supermarkets since going veggie and this tastes really similar in the best way possible, super rich and flavorful, and obviously infinitely better for u! Thanks for the recipe Chetna!

Chetna, just wanted to come and give thanks for this recipe. I’ve always struggled with curry but this is EPIC! I’ve made it with chicken, with quorn chicken and a small amount of chicken and bulked it out with sweet peppers. It’s amazing every time. Soooooo tasty 😋 thank you 🙏🏼🙏🏼🙏🏼❤️❤️❤️
