Thank you; I can make hand-stretched noodles now, thanks to your instructions, but I think the water soak shown in this video will produce better results for me. Also, I’ve made the tomato-noodle-egg soup several times, and everyone loves it. It’s brightly flavored, not too heavy, and delicious with any kind of vinegar or garlic dipping sauce on the side. Thanks again, and keep posting videos!
BrainDropppingsCarlin I think she’s using standard all-purpose flour, as it doesn’t look as finely powdered as rice flour does. But I haven’t attempted them yet, so I could be wrong. Her other similar noodles all use all purpose flour and maybe a touch of potato, rice, or corn flour, but she always clarifies that in her voiceover. I plan on making them tomorrow, so I’ll let you know how it goes with 100% AP flour.
Miranda Mom I’m sorry, I forgot to tell you that I made these with all purpose flour - and they were easy to make. I really liked using cold water instead of coating the dough with oil to get the right consistency for pulling. They weren’t as thin as regular hand pulled noodles, but maybe I’m just not as good with this technique. But they tasted great, were chewy and flavorful, and best of all, much easier to clean up than using the regular method. I hope you’ve tried them too. What did you think of the recipe and technique? Did it work well for you?

@@sarasoskin1144 FYI most northern Chinese recipe are wheat based. So, it's safe to assume the noodles, dumplings, bread, bun, flatbread, pancakes on this channel are wheat based. The close second starch used are potatoes. They do eat rice, just not on a daily basis. In the Southern parts on the other hand, eating rice 3 times a day is not uncommon 😁

@@netherworldbeyond6838 I think it's all purpose flour. Rice won't stretch. It will break. But, flour has gluten and so it can be stretched.
