  • If there was such thing as a "kitchen sink" walk in the woods, this would be it. Hunting for squirrel, foraging for wild mushrooms, and scouting for deer - ALL IN ONE AFTERNOON! Not only do we cook squirrel, I also butcher it (not very well lol), and cook wild foraged mushrooms. Chicken of the woods, Lion's Mane, and Hen of the Woods. What a wonderful time of year.

    I ate many squirrels when I was a teenager. My Granny lived with us and would cook 'em for me (I did the cleaning of the squirrels). Chicken fried squirrel is my favorite! She taught me how to cook them, but my squirrels never tasted as good as hers. I realized later in my life that I was missing a key ingredient...

    I have taken several squirrels over the years, I generally stew them and throw in rice and veggies. Regarding chopping onions use a ceramic knife, they are sharp enough to not crush the onion and release the vapors.

    Allie, if you store your onions in the refrigerator, they will not emit as much gas when cut and will reduce your tears quite a bit.

    From someone that’s pulled off a bunch of tails with the tail method of skinning, Here’s a couple things I do to to help the process. I go through the tail and also the meat and stop at the skin. Then make a couple slits outward down each leg, then make sure your boot is on the tailbone as close to the squirrels back as possible. Dramatically increases the chances of a good tail pull. Enjoyed the video.

    Lower the heat a little and add a little olive or avocado oil with the butter. This will help prevent the butter from burning. Also add the garlic after the onions are about done. Garlic only needs a min or 2. Great stuff and continued success.

    Hunter orange usually isn’t required squirrel hunting. Squirrel in Louisiana doesn’t open until October.

      The squirrels are to dumb to notice what color you have on. However, going into the woods and being hard to spot by other people is a bad idea.

    The easiest way to skin a squirrel is to make a incision in the middle of the back two fingers on both sides of the cut and pull both sides

    I used to squirrel hunt just so I could scout for deer there is a small gland under the front arms that will make the meat bitter and my favorite dish was squirrel and dumplings in a pressure cooker and I use a 12 gauge with a birdshot you can catch him in midair and we have fox squirrels in the south about four times the size of a regular grey 😁👍🐝🤠

    Digging this video Allie, nice find on the mushrooms. I had to chuckle a bit when you dropped that bowl into the stew pan, I drop things rather frequently I am told it is because I have carpel tunnel in both wrists.

    Use small work bench Vice instead of your foot on the tail. Be sure to cut down from tail to back and out to top of hind quarters. Pinch tail and lose skin in Vice so tail will not break off. May help to insert finger between skin and hide as far down back and around to top of hind quarters. With vise closed grab hind legs and pull stright up. Practice makes perfect here so don't get discouraged breeding the tails off. Skin more squirrels that I can count.
    You did supper job cutting it up.

    I got 23 squirrels and 49 rock chucks with my air rifle last Saturday. I was doing pest control on the ranch. We have no choice or we don't eat and can't pay bills without crops and feed. Nothing goes to waste we make fresh canned dog food for shelters and our own dogs. Its not FDA approved for humans but ok for dogs when giving it away to shelters, go figure. When is your hubby going to make a RUclips channel to post his hunts? Not that I don't like yours. I swear I love them you're hilarious, lol.

    If you put the onion in the freezer like an hour before cutting, no mo tears! Great video as always, it actually made me download a mushroom identification app, gotta wait till spring to see how it works I guess!

      I haven't been able to find a hot onion in 20 years. which are the only onions for cooking the last generation stopped buying them. sweet onions have no flavor whatsoever once cooked I don't get it

    SQUIRREL ? , now you talkin'. I love grey squirrel. I slooooooow cook mine in butter with a pinch of sugar, and a dash of cinnomin. -I mean a TINY amount of cinnomon- I can't spell it.! Salt, and pepper. Cook on low heat for 2 hours. It comes out mouth watering delicious! Happy Hunting Guys !

    oh crab! i thought you said that it tastes like crap lol i have some experience growing mushrooms. a lot of nurturing to get it right. people think im growing illegal mushrooms, but no, im growing southeast asian mushrooms that are hard to find at local asian shops.

    I use a camo Turkey mask during squirrel season to keep the bugs out of your face. Probably not a good idea if RUclips recording.

    Where you messed up on skinning the squirrel was by not cutting the hide out an inch-ish on either side of the tail cut.
    (I've probably pulled the tails off on near a dozen over the years....it happens)

    I got good at, & shot so many grey squirrels, I got to the point, I couldn’t eat another one!
    I used the .22 hollow point, making head shots, so I didn’t have to deal with shot from the 12 gage.
    I grew up, shooting Norway pine cones, for target practice.

      @@OutdoorsAllie When I was a teenager, I ate many squirrels. I just had a taste for them. My Dad told Mom that my body was craving something that squirrels provided. All that I know is that I'm in my mid 50's now and my heart arteries are clear. Lean meat does a body good! I eat more deer than squirrels now. Chicken and turkey is on the menu too. Every once in a while, I do indulge in a Big Mac or Whopper. But not too often.

    My daughter, while deer hunting, found this mushroom parasite thing that looks like a cooked lobster. It was redish on the outside, and pale on the inside. She sliced it up thin and fried it down with onion to go with our steak and it was really tasty with the chicken of the woods she also found, no deer, just mushrooms.

    You definitely had the right idea or method on skinning the squirrel. The only thing you didn't do quite right is to skin back a bit more of the hide from the tail/back bone area. You should have it skinned a minimum of an inch down each side, then step on the tail and do your pull. The squirrel will come right out of his "jammies"! Tip! When you get the hide pulled all the way off the body, keep your foot on the tail and now removed hide and pull the legs through just enough to snip or remove the paws or lower leg. After doing all four lower legs, while there is still tension on the squirrel, go ahead and remove the head. Very little hair will get on the meat this way! Good job!!

    My grandpap and I used to skin squirrels by cutting around the middle of the squirrel, kind of like as if it was wearing a belt too high. Then he on one side, me on the other, we'd each pull from the middle, one towards the head, one pulling towards the tail.

    Add garlic before liquid, captures flavour else it deteriorates. Add garlic and as soon as you smell it (happens when certain temp reached) add the liquid. Clarified butter works well if you want to cook on high heat. Curious about squirrel. Seems an aversion or negative sentiment in some areas so haven’t tried it.

      That’s just city-folk that think they are pets. Squirrel is delicious, and seeing this stew get made had my mouth watering. Bummer that she over cooked the garlic, but after the rest of the flavors combined I doubt the acridness came through at all. The garlic would have been a much bigger issue if she were making something more simple, like a pan fried dish.

      I watched this video hoping for a good simple recipe for squirrel for like when your camping. Although her recipe looks AMAZING, it's a bit complicated. Hopefully her cook book will have something more simple. Or several options.

    It might sound crazy!!! A professional chef helped told me about his creams and especially chowders. Obviously only use Real butter. To thicken them and not have worry about separation ,use a good portion of non diary creamer in conjunction with your milk or heavy creams.yes the powdered shit people use in coffee. It works and is amazing.

    Allie, Outstanding Video! You should come up with Allies Game Cook book? If you place your onion in the freezer for 15 minutes prior, it prevents from you tearing up. Also, if you want to eat legs from the Turkey, I found if you season the leg then place it in a pressure cooker, the meat falls completely off and delicious. Anyway, you and Nick keep up the excellent work!!!! Please stay safe......
