    Ingredients (makes 1 loaf*)
    Cake batter:
    Zest from 2 lemons
    170g Sugar
    170g Butter
    3 large Eggs
    170g Cake flour
    40g Almond flour
    2g Baking powder
    Lemon simple syrup:
    60mL Lemon juice
    50g Sugar
    Lemon icing/glaze:
    232g Powdered sugar
    37mL Lemon juice
    *loaf pan size: 7¾” x 3¾” x 2½”

    What if I only have all purpose flour?

      Hi, the cake crumb will be less tender and not as fine with all purpose flour, so I would not recommend substituting the cake flour. But if you cannot find cake flour, I’ve read that you can make 1 cup of cake flour by mixing 3/4 cup + 2 tbsp all purpose flour and 2 tbsp cornstarch. I’ve never tried this but you can try and let me know how it goes :)
