How to Make Keto Strawberry Jam (3 ingredients only, no pectin)

    Ingredients:
    1lb or 3 cups strawberries (frozen or fresh)
    1/3 cup Erythritol sugar
    1 tbsp lemon squeezed
    Procedure:
    1. In a pan, add strawberries and stir over medium heat
    2. Add sugar and increase heat to med-high and mix it all up
    3. Stir frequently and bring the mixture to a boil
    4. Check if strawberries are soft. Mash it up a bit.
    5. Continue boiling until mixture is thick (2-3mins)
    6. Add 1 tbsp lemon squeezed
    7. Turn off heat and let it cool down a bit
    8. Transfer the jam to a jar or glass container.
    Note: Please keep refrigerated. Will keep for 1-2 weeks in the fridge.

    I am making this and tastes amazing. I add some Chia seeds. It used to cost me over $10 for a keto small jar. This is a lot cheaper making it at home and it's fresh. Thanks

    So quick and simple! I've got a birthday coming up and my dad is on a keto diet, so I am going to make a keto cheesecake. I think this jam will be perfect on top! Will try, thanks for the tutorial!

      That's exactly what i did it was awesome. Used powdered monk fruit and erythritol as the sweetner though

    good but will sub allulose for erith.. it makes the best jelled items (cranberry sauce, blueberry compote, etc).

    So basically you could make this without any sugar substitute at all! I'll make a small batch as it´s strawberry season and I'm probably the only one who´s going to eat it. May give it a try with some liquid stevia, too.

    If you freeze this, it will be a solid block. you need pectin. which is easy to use. Then you can preserve it in the freezer without it freezing solid.

      pre-portion serving sizes on some foil or folded between parchment paper, smoosh flat, then freeze. works great putting them all in a big ziploc bag.
      thaws in your hand :)

    Sounds easy might try it in smaller amount in microwave, do it more often that way.

    Hi new here. My Smuckers preserve has 13 gr net carb!!! That's CRAZY! so I wanted to make my own.Do you happen to have the macros or carbs for this thanks.

      Hello! This recipe makes about 20 servings, 1 tablespoon each at about 5g net carbs.

      Beware the Smuckers sugar free has Maltodextrin which is way worse than sugar

      @LaTasha McMorris get monk fruit lakanto sweetener at Costco it taste great and it has zero impact on ketosis and blood sugar.

    I tried making this and it tastes amazing! However, once the jam is cooled in the fridge, the erythritol crystalizes. Is there a way to fix it?

      Oh really? It may be the brand that you're using. I use Halefresh Erythritol. Try using a different brand and let me know if erythritol still crystalizes.

      Try xylitol. It works wonders and has no cooling effect like erythritol. It melts soooooo ez! I use it for meringue cookies, keto cool whip, and a host of other recipes.

      Not sure about that. Haven't tried Stevia. It may produce different result or taste.

      Haven't tried to put back in the freezer. I would recommend to store in the refrigerator and consume within 2 weeks

      It maybe because of the brand of erythritol. Try a different brand. I used Hale Fresh brand for this.
