I think mixing it with baking soda and baking powder and then adding a little bit of vinegar will make it the texture less dense and soft. I'll give it a try and let you know.

I had to laugh when I read this comment. You should see the other half of my kitchen when I'm done filming. It generally takes me 1 hour to clean up all the mess ;) I am definitely a clean freak though.
I love quinoa, but the flakes have a strong "acid" or bitter taste. So I'm not particularly fond of the flakes. My fave grain next to quinoa is TEFF. Do more recipes with it, whole tiny grains or flour. Love to see what you do with TEFF. It's soooooo good !!
Thank you for the tip, Eugenia! I find that if I toast the quinoa, it loses much of its bitter aftertaste. I actually made the banana bread just yesterday with toasted quinoa flakes and even Tanner agreed that it's better (although not as good as oats, in Tanner's opinion :)

Thank you! Medjool dates are a fresh fruit, so they do raise blood sugar. I use all kinds of sweeteners, mainly maple syrup, coconut sugar, stevia, and monk fruit.
I have tried a lot of cake recipes using oat flour and have found the resulting texture somewhat "gummy". HOWEVER, Petra I have made so many of your recipes and they are always fabulous, that I am going to give this a try. Having looked at the recipe and seen the photo of the texture I reckon the trick of using the dates is likely to mitigate the gumminess of the oat flour. One of the things that has eluded me in this gluten free vegan baking adventure is cake that I really like the texture of. Fingers crossed for this one!
Thank you for such a kind comment! Working with oat flour can be tricky for sure. It's very easy to over-stir which makes it dense or gummy (or both!). If you look at the banana recipe, you will see that I don't use a food processor for it (I do for the muffin tops). The reason is exactly what you mention - if you over-process the mixture, it can turn gummy. Blend the bananas and dates, but then just stir in the dry ingredients. That should do the trick!
OK so I made this cake this morning and the results were spectacular! Best gluten free cake I've ever baked. You'll laugh when you hear the near disaster that almost befell me. I had put the cake in the oven and it was about 4 minutes later when I saw the flax eggs sitting on the bench. Panicked, I opened the oven, the cake was rising, but had not yet started to dry out. I quickly pulled it from the oven (didn't think it would be hot yet so no oven mitts and yes my palms got a little hot but not quite burned, yikes), threw the batter back in the bowl, added the flax eggs and an extra tsp of baking powder (because I was worried that the full activity of the rising agents had already been spent). I very gently folded both added ingredients through the batter and returned it to the oven. Cake turned out amazing, disaster averted!
I have a question about dates. I prefer the soft ones but recently a friend of mine said that the real dates are hard in texture. In order to make it soft they have been soaked in sugar syrup or in honey 😔. Is it true?
Hi Ami - it actually depends on the type of dates you're using. I use Medjool dates, which are actually a fresh fruit (that's why they are so soft). If you use dates from a baking aisle, they are most likely dried (and hard). Some dates are indeed soaked in honey, but again, if you buy Medjool dates, they are fresh dates (no sugar added).
If they have a shiny coating the have been coated with sugar syrup (just a bit not they a bathed in sugar).. if they are not shiney but dull they haven't got a coating, these are the ones I find in a middle eastern store..they are just different kind of date. But just as good for you.. I don't know if this applies to your country.. I saw a documentary about the phenomenal..
A high-speed blender would work too. If you don't have either, you could purchase date syrup (pureed dates) and quinoa/oat flour, and thus eliminate the need for any appliance.

He's not negative, he just has a different palate than she does. It's a matter of taste. I think it's quite nice that she lets us hear his honest, authentic opinion. You can see so many videos of people exaggerating their enthusiasm for their recipes, which I personally find much more annoying.
